{"id":1029,"date":"2010-12-17T06:59:20","date_gmt":"2010-12-17T14:59:20","guid":{"rendered":"http:\/\/www.chefmorgan.com\/?p=1029"},"modified":"2012-04-02T11:56:52","modified_gmt":"2012-04-02T18:56:52","slug":"gingerbread-dolls-delicious-and-fun-simple-pleasures","status":"publish","type":"post","link":"https:\/\/www.chefmorgan.com\/engine\/gingerbread-dolls-delicious-and-fun-simple-pleasures","title":{"rendered":"gingerbread dolls \u2013 delicious and fun"},"content":{"rendered":"<p style=\"text-align: center;\"><strong><span style=\"color: #333333;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-976\" title=\"P1020557\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2010\/12\/P1020557-266x300.jpg\" alt=\"\" width=\"266\" height=\"300\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2010\/12\/P1020557-266x300.jpg 266w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2010\/12\/P1020557.jpg 432w\" sizes=\"auto, (max-width: 266px) 100vw, 266px\" \/><\/span><\/strong><\/p>\n<p style=\"text-align: center;\"><strong><span style=\"color: #333333;\">gingerbread dolls<\/span><\/strong><\/p>\n<p><span style=\"color: #999999;\">The holidays are a time when parents take multi-tasking to all new levels.\u00a0 I have children myself so I am no exception.\u00a0 In fact, I became very aware of my parental multi-tasking when during a lunchtime run I simultaneously collected mulberry tree trimmings for garland and table decor,\u00a0 planned dinner menus and organized their execution in my head while at the same time listened to Selena Gomez (just to stay current on the music my children are listening to). \u00a0 A woman, walking her dog, stared at me and her gaze made me conscious of how absurd I looked running with my large collection of mulberry branches in each hand, singing Selena Gomez songs. \u00a0 The explanation \u201cI\u2019m a mom\u201d immediately spilled from my mouth and she laughed.\u00a0 She understood.\u00a0 It is the final push before winter break and parents are scrambling to get everything done for the holidays before the children are home needing projects to do. \u00a0 I have an answer to both (at least for one afternoon): gingerbread dolls.\u00a0 \u00a0 An edible version of paper dolls, this project gives you your gingerbread for the holidays and the kids a project too.<\/span><\/p>\n<p><span style=\"color: #999999;\">While you can buy gingerbread kits in the stores, I have yet to find one that actually tastes good.\u00a0 These gingerbread cookies are chewy and moist, crisp around the edges, spicy, but not too much, and hold their shape for decorating. \u00a0 The recipe is simple and written with children in mind. \u00a0 Instead of creaming the eggs and the butter, this basically uses a one step method (you can use a stand alone mixer or a food processor) which makes it not only easy for children but \u201cchild-proofs\u201d the tendency to over-cream the sugar and butter, which causes the cookies to spread. \u00a0 I have included two recipes: one written for adults (below); and the second written (with pictures) that a beginning reader can follow.<\/span><\/p>\n<p><span style=\"color: #999999;\">Once the cookies are made, rolled fondant is used to make the clothes.\u00a0 Fondant can be purchased online and at cake supply stores and well as craft stores. \u00a0 You can purchase it in a variety of colors but white can be easily colored by adding food coloring.\u00a0 Although there is a fondant rolling pin it is not necessary for this project. \u00a0 If the fondant is sticking simply use a little powdered sugar on your hands and rolling pin. \u00a0 A pie cutter, a dull knife, kitchen scissors (or even a plastic play-dough cutter) can be used to tailor the clothing. \u00a0 Spices, sprinkles and candies make nice accessories but let your child\u2019s imagination be their guide.\u00a0 Use royal icing (recipe posted) to adhere the clothing to the cookies or if the fondant dries the clothes will come off of the cookie (which can be good too if your cookie is a fashionista and wants to change her clothes).<\/span><\/p>\n<p><span style=\"color: #999999;\"> <\/span><span style=\"color: #999999;\">A couple of notes on the ingredients.\u00a0 This recipe uses both dark muscovado sugar and dark brown sugar. \u00a0 Muscovado is unrefined sugar made from sugarcane juice which has a high molasses content.\u00a0 It is a wonderfully spicy, moist and aromatic. \u00a0 It adds a richness to the cookies that dark brown sugar alone cannot give you.\u00a0 It also has small, dark bits of\u00a0 molasses-sugar which adds character in appearance and taste (all gingerbread should have freckles as well as laugh-lines).\u00a0 You can crush them for a more uniform look but the small bits do not affect the cookie adversely unless they are too big. \u00a0 Do not use muscovado sugar exclusively for cookies or they will be too spicy.\u00a0 You can eliminate it and use only dark brown sugar; however, do not use light brown sugar or the cookies will be plain and uninteresting (in taste and appearance).<\/span><\/p>\n<p><span style=\"color: #999999;\">Make sure your butter is room temperature (which means it is pliable but not too soft).\u00a0 Cut it into chunks because you want to make sure it is incorporated with the other ingredients.<\/span><\/p>\n<p><span style=\"color: #999999;\">Molasses is the ingredient which gives gingerbread its character.\u00a0 Molasses is the liquid byproduct of boiling sugarcane until the sucrose crystalizes to create granulated sugar.\u00a0 There are three grades of molasses and the difference lies in which boiling (the first, the second, or the third) produced the molasses.\u00a0 All grades can be sulphured or unsulphured.\u00a0 Light molasses is produced from the first boiling, dark molasses from the second, and blackstrap from the third boiling. \u00a0 The molasses I recommend using for these cookies is Grandma\u2019s original unsulphured molasses (yes, the very same one our parents used when we were kids).\u00a0 I have tried several, the organic ones, the darker molasses, and blackstrap, and while I use these others for spice cakes, they are too spicy for cookies.<\/span><\/p>\n<p><span style=\"color: #999999;\">Lastly, under-bake the cookies to achieve a chewy consistency. When small cracks in the cookies begin to form, take the cookies out of the oven and let the carry-over heat from the baking pan continue to bake the cookies for about 2-3 minutes.\u00a0 Then place the\u00a0 cookies on a metal rack to cool.\u00a0 If you want crisp cookies, bake them longer, roll them flatter, and\/or reduce the oven temperature slightly. \u00a0 Store the cookies in an air-tight container for freshness and they should last a few days (assuming they are not eaten before then).<\/span><\/p>\n<p><span style=\"color: #999999;\">Simple.\u00a0 Delicious.\u00a0 unbleached, all-purpose flour<br \/>\n<\/span><span style=\"color: #999999;\">1 teaspoon kosher salt<br \/>\n<\/span><span style=\"color: #999999;\">1 teaspoon Quatre \u00e9pices*<br \/>\n<\/span><span style=\"color: #999999;\">1 teaspoon ground ginger<br \/>\n<\/span><span style=\"color: #999999;\">2 teaspoons ground cinnamon<br \/>\n<\/span><span style=\"color: #999999;\">1\/4 teaspoon ground allspice<br \/>\n<\/span><span style=\"color: #999999;\">1\/2 teaspoon baking soda<br \/>\n<\/span><span style=\"color: #999999;\">8 tablespoons unsalted butter, room temperature, cut into chunks<br \/>\n<\/span><span style=\"color: #999999;\">1 teaspoon orange zest<br \/>\n<\/span><span style=\"color: #999999;\">1\/4 cup dark muscovado sugar<br \/>\n<\/span><span style=\"color: is a combination of ground cloves, nutmeg, black pepper and cinnamon.\u00a0 It can be found in spice stores, some grocery stores as well as online.\u00a0 If you do not have time to get it, substitute an additional 1\/2 teaspoon ground cinnamon, 1\/4 teaspoon ground cloves, 1\/4 teaspoon ground nutmeg, and 1 click of a pepper mill (set to fine grind).<\/span><\/p>\n<p><span style=\"color: #333333;\"><span style=\"text-decoration: underline;\"><strong>gingerbread clothing<\/strong><\/span><\/span><\/p>\n<p><span style=\"color: #999999;\">1 package rolled fondant icing<br crushed cookies, crushed nuts, licorice)<\/span><\/p>\n<p><span style=\"color: #ff0000;\"><span style=\"text-decoration: underline;\">how to:<\/span><\/span><\/p>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Combine Dry Ingredients<\/span>.\u00a0 Place the dry ingredients (flour, salt, and spices, and sugars), orange zest, and room temperature butter in the bowl of a mixer or a food processor.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Combine Liquid<\/span>.\u00a0 Place molasses, melted (and cooled) butter and buttermilk in a measuring cup with a spout. \u00a0 Set aside.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Mix<\/span>.\u00a0 Turn mixer on low speed and combine dry ingredients.\u00a0 As soon as combined (it takes on a pea-like characteristic), begin to pour in the liquid with the mixer on low speed (or pour the liquid in through the top of the food processor as you pulse the food processor).\u00a0 The dough is done mixing when all ingredients are combined and the dough comes together.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Chill.<\/span> Remove dough from the bowl and pat into a square shape.\u00a0 Wrap dough in plastic wrap and chill for 2-3 hours in the refrigerator\u00a0 (the dough should be firm, but not hard).<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Roll And Shape<\/span>. \u00a0 Remove dough from the refrigerator.\u00a0 Lightly flour the rolling pin and the counter (or roll between two pieces of parchment paper).\u00a0 Roll dough out to about 1\/4 inch width (no thicker because of the high sugar content of the dough).\u00a0 Cut into desired shape and place on a baking sheet .<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Chill<\/span>.\u00a0 Place tray in the refrigerator for at least 15 minutes.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Bake<\/span>.\u00a0 Remove cookies from the refrigerator and place in an oven preheated to 350 degrees Fahrenheit (or 325 degrees Fahrenheit convection).\u00a0 Bake until cookie are fragrant, have puffed up slightly, and cracks are forming.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Cool.<\/span> Let the gingerbread cookies cool on the baking sheet for 2-3 minutes.\u00a0 Remove with a spatula and let cookies finish cooling on a wire rack.<\/span><\/li>\n<\/ul>\n<p style=\"text-align: center;\"><img loading=\"lazy\"
