It is great for the host too because it can be prepared in advance<br \/>\nand the pur\u00e9e &nbsp;<\/span><span style=\"color: #888888;\">can be re-warmed&nbsp; just before service (or served at room temperature).<br \/>\nIt also can be garnished&nbsp; in various ways.&nbsp;<\/span><span style=\"color: #888888;\">I prefer garnishing the pur\u00e9e with nothing more<br \/>\nthan toasted pecans. However, you can use the&nbsp;<\/span><span style=\"color: #888888;\">traditional<br \/>\ntoasted marshmallows or brul\u00e9e brown sugar on top&#8230;let your Thanksgiving spirit be your guide&#8230;<\/span><\/p>\n<p><span style=\"color: #ff0000;\">makes 4-6 oranges&nbsp;<\/span><\/p>\n<p><span style=\"text-decoration: underline; color: #ff0000;\">what you need:&nbsp;<\/span><br \/>\n<span style=\"color: #999999;\">4-5 sweet potatoes&nbsp;<\/span><br \/>\n<span style=\"color: #999999;\">\u00bd cup <em>light<\/em> sour cream<\/span><br \/>\n<span style=\"color: #999999;\">\u00bc cup brown sugar<\/span><br \/>\n<span style=\"color: #999999;\">1 tablespoon orange zest<\/span><br \/>\n<span style=\"color: #999999;\">1 tablespoon fresh orange juice<!--more--><\/span><br \/>\n<span style=\"color: #999999;\">1 teaspoon kosher salt<\/span><br \/>\n<span style=\"color: #999999;\">1 teaspoon&nbsp; freshly ground nutmeg<\/span><br \/>\n<span style=\"color: #999999;\">4-6 medium, beautiful valencia oranges, cut in half with flesh scooped out (use it for your juice)<\/span><\/p>\n<p><span style=\"text-decoration: underline;\">garnish<\/span><br \/>\n<span style=\"color: #999999;\">\u2153&nbsp;cup chopped pecans, toasted<\/span><br \/>\n<span style=\"color: #999999;\">miniature white marshmallows or marshmallow creme (optional)<\/span><br \/>\n<span style=\"color: #999999;\">light brown sugar (optional)<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><a href=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/11\/P1220414.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-10444\" title=\"chef mrogan sweet potato farce\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/11\/P1220414-500x500.jpg\" alt=\"\" width=\"500\" height=\"500\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/11\/P1220414-500x500.jpg 500w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/11\/P1220414-150x150.jpg 150w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/11\/P1220414-300x300.jpg 300w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/a><\/p>\n<p><span style=\"text-decoration: underline; color: #ff0000;\">how to:<\/span><\/p>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Roast Sweet Potatoes.<\/span> Cut sweet potatoes in half, lengthwise. Place sweet potatoes face side down on a baking sheet pan lined with parchment paper. Place in an oven preheated to <span style=\"color: #ff0000;\">400 degrees Fahrenheit<\/span> and until potatoes are tender, skins are wrinkled, and potatoes are fragrant. Remove from the oven and let cool. &nbsp;<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Peel.<\/span> Once cool, peel the skins from the potatoes and discard.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Pur\u00e9e.<\/span> Use an immersion blender or food processor to pur\u00e9e the potato flesh. Add sour cream, sugar, zest, orange juice, salt, and nutmeg and blend to incorporate until mixture is pur\u00e9e consistency (It should look like light orange pudding).<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Prepare Oranges.<\/span> Cut the top &nbsp;\u2153 off of the oranges&nbsp; (or in half if the oranges are larger). Use an apple corer or spoon to scoop out the flesh.&nbsp; You can cut a little off of the bottom of the hallowed out oranges to create a flat surface.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Pipe in mixture.<\/span> If cold, warm the pur\u00e9e or at least warm to room temperature. Scoop the pur\u00e9e into a disposable piping bag. Fill the hallowed out oranges to the top.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Garnish<\/span>. If topping the oranges&nbsp; with marshmallows or brown sugar to brulee, place under broiler to toast marshmallows or&nbsp; brulee sugar.
