The cheese, spiked with black pepper, reminded me carbonara. Eager to use the cheese but hesitant to use it on routine spaghetti pasta with little nutritional value, a basket full of winter squash caught my eye. Inspiration for this week\u2019s <em><span style=\"color: #ff0000;\">simple pleasure<\/span> <\/em>was found: <a title=\"spaghetti squash \u00e0 la carbonara (spaghetti squash carbonara)\" href=\"http:\/\/www.chefmorgan.com\/spaghetti-squash-a-la-carbonara-spaghetti-squash-carbonara\"><span style=\"color: #ff0000;\"><em>spaghetti squash \u00e0 la carbonara.&nbsp;<\/em><\/span><\/a><\/span><\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/11\/chef-morgan-spaghetti-squash.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-10484\" title=\"chef morgan spaghetti squash\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/11\/chef-morgan-spaghetti-squash-375x500.jpg\" alt=\"spaghetti squash\" width=\"300\" height=\"400\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/11\/chef-morgan-spaghetti-squash-375x500.jpg 375w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/11\/chef-morgan-spaghetti-squash-225x300.jpg 225w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><span style=\"color: #999999;\">&nbsp;<!--more-->My disclaimer is this: this dish is not the light, fresh, protein-rich dish which is my usual fare. It is not a marathon preparation favorite nor am I the first person to turn a fruit (vegetable) into a creamy, cheesy delight of warm peppery and bacon goodness. This is what I would call unabashed comfort food. Cold weather food (comfort food probably on your \u201cenjoy in moderation\u201d dish, just like foie gras soup or braised pork belly roulade with saut\u00e9ed Calvados flambl\u00e9ed apples). Something that says autumn and winter and has nothing to do with turkey.&nbsp;<\/span><\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/11\/chef-mrogan-spaghetti-squash-interior.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-10492\" title=\"chef mrogan spaghetti squash interior\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/11\/chef-mrogan-spaghetti-squash-interior-580x435.jpg\" alt=\"spaghetti squash interior\" width=\"580\" height=\"435\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/11\/chef-mrogan-spaghetti-squash-interior-580x435.jpg 580w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/11\/chef-mrogan-spaghetti-squash-interior-350x262.jpg 350w\" sizes=\"auto, (max-width: 580px) 100vw, 580px\" \/><\/a><\/p>\n<p><span style=\"color: #999999;\">The good news is that at the core of this recipe is seasonal spaghetti squash and egg protein (I left the egg whites in). The less than good news is that there is a generous use of cheese but I do use <span class=\"famos-shop click famos-annotation refid-12Q1I\" title=\"famos pancetta\">pancetta <\/span>(which has less fat than lardons or bacon) and I eliminated the cream all together. As carbonara goes, I believe it is as healthy as you can get&#8230;we took out the cream and the empty pasta carbohydrates and that is something, right?<\/span><\/p>\n<p><span style=\"color: #999999;\">Classic carbonara is an Italian, not French, pasta dish but it is also commonly considered a mode of preparation (by cooking the eggs and melting the cheese with the heat of the cooked spaghetti).&nbsp; What adds to the richness and memorableness of this dish is the enthusiastic embellishment of freshly ground black pepper and the bacon\/pancetta (because you also use the rendered pork fat from cooking the product by add the pasta to it at the same time you add the egg\/cheese mixture). Heavy cream is often used with complete abandon.<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #999999;\"><a href=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/11\/chef-morgan.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-10481\" title=\"chef morgan\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/11\/chef-morgan-375x500.jpg\" alt=\"hotel in frnce\" width=\"375\" height=\"500\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/11\/chef-morgan-375x500.jpg 375w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/11\/chef-morgan-225x300.jpg 225w\" sizes=\"auto, (max-width: 375px) 100vw, 375px\" \/><\/a><\/span><\/p>\n<p><span style=\"color: #999999;\">The French are not strangers to carbonara. One of the more inventive uses of the carbonara technique is by <span style=\"color: #ff0000;\">Chef Jean Fran\u00e7ois Pi\u00e8ge<\/span> in his<\/span><span style=\"color: #ff0000;\"><em style=\"color: #999999;\"> squid \u00e0 la carborona<\/em><\/span><span style=\"color: #999999;\"> at the <span style=\"color: #ff0000;\">H\u00f4tel Thoumieux<\/span> (a brasserie on <\/span><em style=\"color: #999999;\">rue Saint-Dominique <\/em><span style=\"color: #999999;\">in the 7th arrondissement of Paris see my <a href=\"http:\/\/www.chefmorgan.com\/vienez-avec-moi-dans-le-7eme\">July 20, 2011 post<\/a> for more information). The dish has what some describe as a cult following. Chef Piege cuts squid into strips so they resemble spaghetti pasta and cooks the squid with sliced onions in generous amounts of egg yolks and heavy cream, topping it with an egg. Spaghetti squash is a surprise for many people. It is a fruit, commonly thought of as a vegetable, which looks like a yellow blimp. Once cooked, the starch granules absorb the moisture and due to the unique fibrous texture of the spaghetti squash, the yellow flesh separates into strands resembling spaghetti. Rich in beta carotene (the darker the yellow\/orange, the more beta carotene), potassium, and vitamin A, spaghetti squash has about&nbsp; 42 calories per cup.<\/span><\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/11\/chef-morgan-squash-carbonara-2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-10487\" title=\"chef morgan squash carbonara 2\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/11\/chef-morgan-squash-carbonara-2-580x435.jpg\" alt=\"squash carbonara\" width=\"580\" height=\"435\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/11\/chef-morgan-squash-carbonara-2-580x435.jpg 580w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/11\/chef-morgan-squash-carbonara-2-350x262.jpg 350w\" sizes=\"auto, (max-width: 580px) 100vw, 580px\" \/><\/a><\/p>\n<p><span style=\"color: #999999;\">I first made this recipe for a friend visiting from out of town. Born in Paris, with a mother who routinely and easily makes<em> p\u00e2t\u00e9 de foie gras<\/em>&nbsp;during holidays, her food knowledge and appreciation for food is innate (like most French) and I value her food opinion and trust her \u201ctaste,\u201d in all things, especially food.&nbsp; She loved it. I have since made it for others and it has been a hit. French and American approved: gotta love a recipe like that. Be sure not to omit the fresh thyme when you are roasting the squash; it adds a fresh, subtle element to the dish.
