Use a knife or a pizza cutter to cut the puff pastry sheet into strips about \u00bd\u201d wide and 5-6\u201d long.&nbsp; Make two twists in each strip. Sprinkle with truffle salt. Place the straws on rimmed baking sheet lined with parchment paper and put them in the refrigerator until you bake them.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Bake. <\/span>Bake the straws in an oven <em>preheated<\/em> to 400 degrees Fahrenheit. &nbsp;Bake for about 8-10 minutes until the straws have puffed and are a golden brown.&nbsp;<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Season.<\/span> Remove from the oven and sprinkle with more salt (if the salt did not stick). Place a large saucepan over medium-high heat. Once pan is hot, add olive oil. When oil is hot, add garlic. When garlic is fragrant (do not let it burn), add shallots and leeks. Once translucent, add mushrooms and a pinch of salt. Cook the mushrooms until moisture has been cooked out, the mushrooms are a deep golden brown, and are slightly beginning to stick to the pan.&nbsp;<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Deglaze.<\/span>&nbsp;Add brandy to the mushrooms and reduce <i>demi sec <\/i>(almost all of the brandy has been cooked out of the pan).<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Add Liquid &amp; Simmer<\/span>. Add potatoes, <i>bouquet garni,<\/i> and water (or stock). Simmer until flavors come together (about 20 minutes).&nbsp; Turn off heat.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Pur\u00e9e.<\/span> Remove the <i>bouquet garni <\/i>and discard. Use an immersion blender or a food processor (in batches) and pur\u00e9e until <em>very<\/em> smooth.&nbsp;<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Add Yogurt. <\/span>Add yogurt and pur\u00e9e the soup again until it is smooth and no white specks of yogurt remain.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Adjust Seasoning.<\/span>&nbsp;Salt and pepper to taste. &nbsp;The soup tastes best if made in advance and the falvors have a chance to combine.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Serve.<\/span> Serve warm.
