I also call it \u201c<i>blanquette d\u2019amour<\/i>\u201d because cooking is all about what you put in the&nbsp;<i>cocotte<\/i>, namely, a little love with hand-chosen ingredients. The present moment is the only time over which we have dominion.<i>&nbsp;The most important person is always the person with whom you are, who is right before you<\/i>, for who knows if you will have dealings with any other person in the future? &nbsp;The most important pursuit is making that person, the one standing at your side, happy, for that alone is the pursuit of life.<\/strong>\u201d &nbsp;&nbsp;(emphasis added).<\/p>\n<p>&nbsp;<\/p>\n<p>At its core, Valentine&#8217;s Day is the celebration of love; love between lovers (of course) but also between parents and children as well as the love between friends. They apply to every person and exclude no one. The same is true of this week&#8217;s recipe. This stew is simple, home-cooking. The sauce is not heavy and I eliminated the heavy cream and replaced it with&nbsp;a little <em>cr\u00e8me fra\u00eeche.<\/em> It you cannot find <em>cr\u00e8me fra\u00eeche<\/em>, use light sour cream.&nbsp;<\/p>\n<p>The stew can be served on its own or on top of buttered egg noodles, rice, or&nbsp;as here, on toasted French bread slices rubbed with fresh garlic&nbsp;which soak up the sauce<br \/>\n(<em>miam !<\/em>).<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"size-large wp-image-11366 aligncenter\" title=\"toasted French bread slices rubbed with fresh garlic\" alt=\"toasted French bread slices rubbed with fresh garlic\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2013\/01\/DSC03811-333x500.jpg\" width=\"333\" height=\"500\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2013\/01\/DSC03811-333x500.jpg 333w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2013\/01\/DSC03811-200x300.jpg 200w\" sizes=\"auto, (max-width: 333px) 100vw, 333px\" \/><\/p>\n<p>&nbsp;<\/p>\n<p>In France you will only see <i>blanquette de veau<\/i> in small bistros. When I told a friend that I was thinking of doing this&nbsp;<i>blanquette<\/i>&nbsp;as a post&nbsp;(he grew up in the Comt\u00e9 region of France where the veal is of superior quality) it was a &#8220;Ratatouille&#8221; moment and he was instantly transported to his childhood: \u201cI love <em>la<\/em>&nbsp;<i>blanquette de veau<\/i>, my mother made that!\u201d he said. \u201cYou never see it anymore.\u201d His exclamation was in French, but I will spare you all of that so we can get back to the stew at hand.<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-11347\" title=\"valentines day rose petals spooned out of a pot\" alt=\"valentines day rose petals spooned out of a pot\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2013\/01\/P1040206-375x500.jpg\" width=\"375\" height=\"500\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2013\/01\/P1040206-375x500.jpg 375w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2013\/01\/P1040206-225x300.jpg 225w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2013\/01\/P1040206.jpg 480w\" sizes=\"auto, (max-width: 375px) 100vw, 375px\" \/><\/p>\n<p>&nbsp;<\/p>\n<p>Traditionally the stew is made with veal but you can easily substitute beef, lamb, or chicken. In other words, make this stew to your Valentine\u2019s dinner companion(s)\u2019 taste. The recipe will be the same, just adjust your cooking times accordingly (i.e., chicken cooks quicker than veal). &nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-11352\" title=\"girl in wedding dress with artichoke bouquet \" alt=\"girl in wedding dress with artichoke bouquet \" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2013\/01\/DSC03322-580x402.jpg\" width=\"680\" height=\"486\"><\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\"><strong>has she gone mad ? this is too easy,&nbsp;<\/strong><br \/>\n<strong>and she says use frozen stuff?<\/strong><\/p>\n<p>The vegetables in this stew vary. My friend\u2019s mother made it with baby potatoes. I have seen the stew made with carrots and\/or parsnips as well. In this recipe I use <i>frozen pearl onions<\/i> (you do not have to peel them and they maintain their shape while cooking), <i>white mushrooms<\/i> (simple, not fancy), and <i>frozen peas <\/i>(I had to include a little Americana).&nbsp;<\/p>\n<p>In the spirit of Valentine\u2019s Day I also include steamed artichoke hearts. The French&nbsp;expression \u201c<i>coeur d\u2019artichaut<\/i>\u201d (artichoke heart) describes a sentimental person who falls in love. It only made sense to include the symbolic vegetable as we are cooking for Valentine&#8217;s Day&nbsp;and quoting Tolstoy. However beyond the symbolic sentiment, artichoke hearts add a nice depth to the stew and contrast (in texture and color) with the white mushrooms and onions.&nbsp;You can use the canned artichoke hearts just check to see if ascorbic or citric acid was used to preserve them. Red carrots (perfect color for the occasion) are in abundance in the Farmer\u2019s Markets right now. If you add potatoes, add them when you add the stock.<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2013\/01\/DSC04053.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-11359\" title=\"la blanquette d\u2019amour\" alt=\"la blanquette d\u2019amour\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2013\/01\/DSC04053-580x380.jpg\" width=\"680\" height=\"486\"><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>The stew is traditionally made in a <i>cocotte<\/i> (what we generally refer to in America as a Dutch oven). <em>Cocottes<\/em> are enamel-lined cast iron large pot. <i>Le Creuset<\/i> or <i>Staub <\/i>(as shown) are my favorite lines. You can also use a heavy-bottomed large pots just make sure it has a tight-fitting lid.
