Her school has a \u201creduced sugar\u201d policy so non-dessert type snacks or treats with modest sugar are encouraged. The Madeleines were brought and the fifth graders loved them. One of the boys in the class (rumored to be an aspiring chef when he is older) asked for the recipe. Later that day the request was repeated by other parents at carpool. I wanted to honor the request and in light of our budding chef, R.S., I wanted to explain the &#8220;how and why&#8221; of making these tender little cakes.<\/span><\/p>\n<p><span style=\"color: #999999;\">&nbsp;<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #999999;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-11469\" title=\" the perfect Madeleines dusted with powdered sugar\" alt=\" the perfect Madeleines dusted with powdered sugar\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2013\/02\/DSC04830-580x386.jpg\" width=\"680\" height=\"486\"><\/span><\/p>\n<p><span style=\"color: #999999;\">&nbsp;<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #000000;\"><strong>what is a Madeleine ?&nbsp;<\/strong><\/span><\/p>\n<p><span style=\"color: #999999;\">&nbsp;<\/span><\/p>\n<p><span style=\"color: #999999;\">Madeleines are little sponge cakes in the shape of a shell. They are butter-rich and tender and if done properly, crispy on the exterior.&nbsp;&nbsp;Madeleines have been around for a few hundred years and they remain a popular snack for French children after school (although I know quite a few adults who enjoy them just as much if not more&#8230;sigh,&#8230;including myself). There is discrepancy as to whom is responsible for creating Madeleines: <span style=\"color: #ff0000;\">Talleyrand\u2019s chef<\/span>, a peasant girl (named Madeleine), or a <span style=\"color: #ff0000;\">Cordon-Bleu cook Madeleine Paumier.<\/span> &nbsp;However, it was French novelist <span class=\"famos-shop click famos-annotation refid-12ZM5\" style=\"color: #ff0000;\" title=\"famos Marcel Proust\">Marcel Proust <\/span>who made Madeleines famous by using them as an example of involuntary memory (so-called the \u201cepisode of the Madeleine\u201d) in his novel<i><span class=\"famos-shop click famos-annotation refid-12ZM6\" title=\"famos \u00e0 la Recherche du Temps Perdu\"><span style=\"color: #ff0000;\">\u00e0 la Recherche du Temps Perdu<\/span> <\/span><\/i>( the search of lost time).<\/span><\/p>\n<p><span style=\"color: #999999;\">&nbsp;<\/span><\/p>\n<p><span style=\"color: #999999;\">Madeleines are simple to make. The perfect Madeleine is soft and chewy on the inside and crispy on the outside. First, adding the flour and the room-<\/span><span style=\"color: #999999;\">temperature milk in alteration will give the little cakes an even, soft crumb. Conversely, if you add the flour all at once (or too much at one time) there will be gluten development and you will have &#8220;tunneling&#8221; in the crumb which is called \u201cworm holes\u201d which is exactly what it looks like.&nbsp; If you add the liquid too much at one time you will get large air bubbles. Adding these ingredients in alteration with the mixer on a <\/span><em style=\"color: #999999;\">low speed<\/em><span style=\"color: #999999;\"> and making sure each component is well-mixed before adding the&nbsp;other one, will prevent both of these problems from happening.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"color: #888888;\">Lastly, letting the batter rest while allow the starch to absorb the liquid,&nbsp;gives the cake a more dense and uniform texture,<\/span><br \/>\n<span style=\"color: #888888;\"> (as the gluten relaxes), and causes less spreading.<\/span><\/p>\n<p style=\"text-align: center;\">&nbsp;<\/p>\n<p style=\"text-align: center;\">&nbsp;<\/p>\n<p style=\"text-align: center;\">&nbsp;<\/p>\n<p style=\"text-align: center;\">&nbsp;<\/p>\n<p style=\"text-align: center;\">&nbsp;<\/p>\n<p style=\"text-align: center;\">&nbsp;<\/p>\n<p style=\"text-align: center;\">&nbsp;<\/p>\n<p style=\"text-align: center;\">&nbsp;<\/p>\n<p style=\"text-align: center;\">&nbsp;<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-11486\" title=\"a bite out of a madeleine \" alt=\"a bite out of a madeleine \" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2013\/02\/chef-morgan-bite-2-447x500.jpg\" width=\"547\" height=\"600\"><\/p>\n<p style=\"text-align: center;\"><strong>crispy outside<\/strong><\/p>\n<p><span style=\"color: #999999;\">Getting a crispy outside is done two ways. First, bake the Madeleines at a high temperature. Most recipes call for Madeleines to be baked at 375 degrees Fahrenheit.
