The <em>red<\/em> carpet and easy appetizers for your Oscar party inspired this week\u2019s <span style=\"color: #ff0000;\"><i>simple pleasure<\/i>: spicy crab toasts.<!--more--><\/span><\/span><\/p>\n<p><span style=\"color: #999999;\">Hungry and I recently ate at David Myer\u2019s Asian-inspired new restaurant in Century City. One of the entr\u00e9es we enjoyed was a spicy crab crostini with cucumbers. Miam (yum). Crab meat (for me, canned) is one of those things I try to keep on hand at home because it is light, protein-rich and can be used for a quick snack or meal. This week\u2019s recipe is a combined adaptation of Myer&#8217;s entr\u00e9e and the version I make at home when I want something quick with a kick.\u00a0<\/span><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-11663\" title=\"crab on ice\" alt=\"crab on ice\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2013\/02\/chef-morgan--580x386.jpg\" width=\"522\" height=\"347\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2013\/02\/chef-morgan--580x386.jpg 580w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2013\/02\/chef-morgan--350x233.jpg 350w\" sizes=\"auto, (max-width: 522px) 100vw, 522px\" \/><\/p>\n<p><span style=\"color: #999999;\">As written, the recipe is not very spicy (to appeal to more people). If you want to bump up the spice factor, add a few additional pinches of cayenne pepper or <i>piment d\u2019espellete<\/i> if you have it.\u00a0Although fresh crab meat can be expensive, you can use canned crab meat. Chicken of the Sea (in the refrigerated section) is my favorite canned crab meat and it comes in a 16 ounce can (enough for two recipes).\u00a0<\/span><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-11664\" title=\"chef morgan\" alt=\"chef morgan\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2013\/02\/DSCI0112-580x369.jpg\" width=\"544\" height=\"469\" \/><\/p>\n<p><span style=\"color: #999999;\">The spicy crab recipe can be made in advance and I did reduce the quantity of mayonnaise as I believe mayonnaise, when used, should act as a binder, not a primary ingredient. Toast the bread and add the crab <i>before<\/i> service. I wrote the recipe with sandwich bread because most people have sandwich bread at home; however, you can use crostini or small leaves from a head of Butterhead lettuce (which is my personal favorite). This spicy crab recipe makes a yummy sandwich (or wrap) too should your focus be on what to take to the office on Monday, not on the Oscars.<\/span><\/p>\n<p><span style=\"color: #999999;\">In the interest of time, I have included the recipe below. And, as always, I wish you a\u00a0<\/span><\/p>\n<p><span style=\"color: #ff0000;\"><i>bon app\u00e9tit !<\/i><\/span><\/p>\n<p><span style=\"color: #000000;\">LM<\/span><\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\">\u00a0<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-11658\" title=\"spicy crab toasts\" alt=\"chef morgan spicy crab toasts\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2013\/02\/chef-morgan-spicy-crab-580x386.jpg\" width=\"680\" height=\"486\" \/><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #ff0000;\"><strong>spicy crab toasts<\/strong><\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"color: #000000;\"><em>makes 12 toasts<\/em><\/span><\/p>\n<p><span style=\"color: #888888;\"><span style=\"text-decoration: underline;\">what you need<\/span>:<\/span><\/p>\n<ul>\n<li><span style=\"color: #999999;\">6 slices sandwich bread (crostini, or Butterhead lettuce leaves)<\/span><\/li>\n<li><span style=\"color: #999999;\">\u00a01 avocado, sliced<\/span><\/li>\n<li><span style=\"color: #999999;\">\u00a08 ounces crab claw meat (fresh or canned)<\/span><\/li>\n<li><span style=\"color: #999999;\">\u00a01 tablespoon minced fresh cilantro<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\">2 tablespoons quality mayonnaise\u00a0<\/span><\/li>\n<li><span style=\"color: #999999;\">\u00bd teaspoon concentrated tomato paste\u00a0<\/span><\/li>\n<li><span style=\"color: #999999;\">\u00bd teaspoon fresh lemon juice\u00a0<\/span><\/li>\n<li><span style=\"color: #999999;\">\u215b teaspoon ground coriander \u00a0<\/span><\/li>\n<li><span style=\"color: #999999;\">\u215b teaspoon cayenne pepper (and to taste)\u00a0<\/span><\/li>\n<li><span style=\"color: #999999;\">\u215b teaspoon kosher salt<\/span><\/li>\n<\/ul>\n<p><span style=\"color: #999999;\">\u00a0<\/span><\/p>\n<p><span style=\"color: #999999;\"><span style=\"text-decoration: underline;\">how to<\/span>:<\/span><\/p>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Combine Ingredients.<\/span> Place the mayonnaise, tomato paste, lemon juice, spices and salt in a bowl. Combine. Add crab meat and cilantro. Mix well. This can be done in advance.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Toast Points.<\/span> Before service, toast bread slices. Cut off crusts and cut center squares in half on the diagonal. \u00a0(NOTE: if you want to eliminate the bread, leaf a small head of Butterhead lettuce and use the leaves as lettuce cups in lieu of the bread).\u00a0<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Serve.<\/span> Place a slice of avocado on each bread slice (or in each lettuce cup) and a dollop of spicy crab on each toast point.
