the day the three Magi found the baby in Bethlehem and bestowed upon him gifts of gold, frankincense and myrrh.\u00a0 In France, the Epiphany is celebrated with<\/span><em><span style=\"color: #888888;\"><span style=\"color: #ff0000;\"> la galette des rois<\/span> <\/span><\/em><span style=\"color: #888888;\">(also known as the \u201ctwelfth night cake\u201d or simply \u201cking cake\u201d).<\/span><\/p>\n<p><span style=\"color: #888888;\"> <\/span><em><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">La galette des rois<\/span> <\/span><\/em><span style=\"color: #888888;\">consists of two layers of puff pastry with a frangipane (almond cream) filling.\u00a0 It is garnished with a paper gold crown.\u00a0 What makes the cake special; however, is the trinket,<\/span><em><span style=\"color: #888888;\"> la f\u00e8ve <\/span><\/em><span style=\"color: #888888;\">(a fava or broad bean), that is hidden inside.\u00a0 Tradition dictates that the person who\u2019s slice contains <\/span><em><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">la f\u00e8ve<\/span> <\/span><\/em><span style=\"color: #888888;\">is crowned king or queen for the day and gets to wear the crown.\u00a0 To ensure that the distribution of<\/span><em><span style=\"color: #888888;\"> <span style=\"color: #ff0000;\">la f\u00e8ve<\/span><\/span><\/em><span style=\"color: #888888;\"><span style=\"color: #ff0000;\"> <\/span>is completely random, the youngest person present goes under the table and calls out the order of the cake recipients.\u00a0 An extra piece of the cake is sliced, <\/span><em><span style=\"color: #888888;\">&#8220;<span style=\"color: #ff0000;\">la part du pauvre<\/span>&#8220;<\/span><\/em><span style=\"color: #888888;\"> (the poor man\u2019s share), should anyone of lesser financial means happen to stop by the house.\u00a0 Today the tradition of <\/span><em><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">la galette des rois<\/span> <\/span><\/em><span style=\"color: #888888;\">extends beyond the religious context and the cake is sold and enjoyed in January generally, not just on January 6.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"color: #888888;\">For me<\/span><em><span style=\"color: #888888;\">,<span style=\"color: #ff0000;\"> la galette de rois<\/span>, <\/span><\/em><span style=\"color: #888888;\">takes a very personal significance as well.\u00a0 Three years ago to the day an ICU nurse<\/span><span style=\"color: #888888;\"> gave me her crown (she had found <em><span style=\"color: #ff0000;\">la f\u00e8ve)<\/span><\/em>. \u00a0 I still have it and the crown reminds me of how fleeting and precious life is. \u00a0This year my New Year\u2019s resolution is the same that is has been for the last two years:\u00a0 to eat a piece of<span style=\"color: #ff0000;\"> <\/span><\/span><em><span style=\"color: #ff0000;\">la galette des rois <\/span><\/em><span style=\"color: #888888;\"> because I know that the ability to look down at the crown on the cake and enjoy a piece with those you love is like finding <em><span style=\"color: #ff0000;\">la f\u00e8ve<\/span><\/em> every day.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"color: #888888;\">This week\u2019s simple pleasure is<span style=\"color: #ff0000;\"> <\/span><\/span><em><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">la galette des rois<\/span>.<\/span><\/em><span style=\"color: #888888;\"> It is very simple to make and a fun tradition.\u00a0 The active recipe time is about 20 minutes.\u00a0 Nuts are decisive: you either like them in dessert or you do not. \u00a0If you like almonds, you will love this cake. However, if you are a person who is not crazy about almonds, you can replace the almond extract with vanilla extract or another extract such as orange.\u00a0 You can also minimize the almond flavor by adding melted chocolate to the almond cream or mixing in a little strawberry jam with rose water.\u00a0 However, do not add too much moisture (maxiumum of 2-3 ounces) or you will have soggy puff pastry.\u00a0 With respect to the crown, you can buy the gold crowns at speciality stores or on the internet; however, you can easily make one of your own.<\/span><\/p>\n<p><span style=\"color: #888888;\">Forget the diet.\u00a0 This week<\/span><em><span style=\"color: #888888;\"> <span style=\"color: #333333;\">let&#8217;s all <\/span><\/span><\/em><span style=\"color: #888888;\">eat a \/>\n<\/span><span style=\"color: #888888;\">3 ounces granulated sugar<br \/>\n<\/span><span style=\"color: #888888;\">1\/2 teaspoon kosher salt<br \/>\n<\/span><span style=\"color: #888888;\">2 tablespoons powdered sugar, sifted<br \/>\n<\/span><span style=\"color: #888888;\">2 ounces (4 tablespoons) unsalted butter, cold and cut into chunks<br \/>\n<\/span><span style=\"color: #888888;\">1 egg<br \/>\n<\/span><span style=\"color: #888888;\">1 egg white<br \/>\n<\/span><span style=\"color: #888888;\">1 teaspoon vanilla extract<br \/>\n<\/span><span style=\"color: #888888;\">1 teaspoon frangipane<\/span><\/span><\/span><\/p>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Create Paste<\/span>.\u00a0 In a food processor, pulse almonds, salt, and sugars until finely ground.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Add Butter<\/span>.\u00a0 Add butter to food processor and continue to pulse.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Add Eggs and Flavoring<\/span>.\u00a0 Add egg, egg white, extracts, and zest to food processor.\u00a0 Pulse until well combined.\u00a0 Set aside.\u00a0 This can be done in advance.<\/span><\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\"><span style=\"color: #333333;\">make cake<\/span><\/span><\/p>\n<p><span style=\"color: #888888;\"> <\/span><\/p>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Roll Out Puff Pastry<\/span>.\u00a0 Roll out puff pastry on a floured surface.\u00a0 Using a 9\u201d tart pan bottom as a pattern, create two circles in the pastry sheets. \u00a0 Cut\u00a0 out circles with kitchen shears.\u00a0 Lay pastry circles flat on a baking sheet lined with parchment paper.\u00a0 Place in the refrigerator for 10-15 minutes.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Stuff.<\/span> Remove from the refrigerator and add frangipane to the center of one circle.\u00a0 Gently spread the frangipane. \u00a0 It should be about one inch in height and come one inch from the edge.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Hide Trinket.<\/span> Place bean or nut (or trinket) in the frangipane (make sure that the recipients know something is in the cake and assess whether your cake recipients are old enough so there is no choking hazard).<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Seal and Cover<\/span>.\u00a0 Use a pastry brush to brush egg wash on the exposed one inch band of pastry surrounding the frangipane.\u00a0 Lay the second puff pastry circle on top.\u00a0 Pinch the edges of the two puff pastry sheets together to close.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Score.<\/span> Using a knife, score the top of the puff pastry with a design of your choice.\u00a0 However, do not cut all the way through.<\/span><span style=\"color: #888888;\"> <\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Chill<\/span>.\u00a0 Return the cake to refrigerator for at least ten minutes.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Bake High<\/span>.\u00a0 Lightly brush egg wash over the top and sides of the cake.\u00a0 Place cake on a fresh sheet of parchment paper on a baking sheet. \u00a0 Place in an oven preheated oven to 400 degrees Fahrenheit. \u00a0 Bake for 10 minutes.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Bake Low<\/span>.\u00a0 Reduce heat to 350 degrees Fahrenheit and continue to bake for about 15 minutes until the cake is golden brown and all layers have puffed.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Cool.<\/span> Remove cake from oven and let it cool on a wire rack.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Garnish<\/span>.\u00a0 Garnish your cake with a
