Change the water and use a brush to remove all of the dirt from the truffle.\u00a0 Continue to change the water as you would for rice.\u00a0 Once the water is clean, dry the truffle well with a towel.\u00a0 Truffles can be sliced and soaked in wine or brandy to prolong their life.\u00a0 Truffles can be preserved by vacuum sealing them and then freezing them.<\/span><\/p>\n<p><span #808080;\">how to use truffles<\/span><span style=\"color: #808080;\"> <\/span><\/p>\n<p><span style=\"color: #999999;\">Truffles can be used as a garnish to enhance the flavor of a dish or as the primary ingredient in a side or main dish. \u00a0 Truffles can be eaten raw, sliced in salads or shaved\/grated and put on pasta, risotto, or on toast.\u00a0 They are delicious in sauces.\u00a0 They can be ground into a paste.\u00a0 Truffle smell penetrates their surroundings (you can take advantage of this for eggs, rice, popcorn kernels).\u00a0 \u201c<span style=\"color: #ff0000;\">Truffer<\/span>\u201d is a French verb which means to create a truffle aroma to a dish by adding truffle pieces (i.e., truffled chicken, truffled risotto, truffled cheese, truffled butter, truffled salt). \u00a0 Generally, Summer Truffles are eaten raw and never peeled.\u00a0 Black Truffles are peeled, and need to be at least warmed to release their aroma.\u00a0 \u00a0 To thinly slice a truffle is\u00a0 \u201c<span style=\"color: #ff0000;\">coupe-truffe<\/span>\u201d.\u00a0 Truffles can be julienned, grated, or ground.\u00a0 Truffles are wonderful steamed en papillote, saut\u00e9ed, poached, and\/or braised.<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #808080;\">truffles pair well with what flavors and foods ?<\/span><\/p>\n<p><strong><span style=\"color: #999999;\"> <\/span><\/strong><span style=\"color: #999999;\">Winter or Summer, Black or White, Truffles work best with uncomplicated, simple dishes:\u00a0 a pur\u00e9ed soup, a risotto, roasted meat, with eggs, or as a spread on toast. \u00a0 White Truffles go well with more delicate foods such as pastas, soups and seafood.\u00a0 Black Truffles are better with heartier meals:\u00a0 meats (for example, poultry, duck, wild boar, beef, venison, veal, foie gras, carpaccio), sauces, and even chocolate&#8230; yes chocolate.\u00a0 With respect to seafood, they go well with fish with more a substantial or oilier texture (Sea Bass, John Dory,\u00a0 Monkfish, or Cod) as well as scallops and oysters.\u00a0 Truffles are well-suited to creamy, rich, or starchier textures: pastas, potatoes, gnocchi, polenta, and pair well with other woodsy flavors and tubers, including, celeriac, leeks, parsnips, horseradish, and sunchokes.\u00a0 Morels and truffles belong to the same fungus species and pair well.\u00a0 Truffles go equally well with other mushroom varieties such as Chanterelles and Hen of the Woods.\u00a0 Chestnuts are my favorite nut to pair with truffles.\u00a0 Sage, thyme and pepper go well with truffles as do olive and nut oils. \u00a0 You can purchase cheese that has been truffled\u00a0 (i.e., <\/span><em><span style=\"color: #ff0000;\">Boschetto al Tartufo<\/span><\/em><span style=\"color: #999999;\">) but make sure to purchase the cheese from a reputable cheese shop as some \u201ctruffled\u201d cheese has no truffles and the texture is rubbery.<\/span><span style=\"color: #999999;\"> <\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #808080;\">a few recipe ideas<\/span><\/p>\n<p><span style=\"color: #999999;\">Here is a short list of some of my favorite ways in which to use truffles:<\/span><span style=\"color: #999999;\"> <\/span><\/p>\n<p><span style=\"color: #999999;\"><br \/>\n<\/span><\/p>\n<p style=\"text-align: center;\"><em><span style=\"color: #808080;\">starters and sides<\/span><\/em><span style=\"color: #999999;\"> <\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #999999;\">savory crepes with chives, truffle shavings and olive oil<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #999999;\">white truffle paste on tartines<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #999999;\">truffle tapenade (chestnuts, mushrooms, sunchokes, and truffles)<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #999999;\">black or white truffle gel\u00e9e with oysters<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #999999;\">summer truffle vichyssoise<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #999999;\">truffles saut\u00e9ed in a Madeira or Champagne sauce<\/span><\/p>\n<p style=\"text-align: center;\"><span
