However brief, doing my marketing for tonight\u2019s dinner, without rain pouring on my head, was a welcome treat. \u00a0<!--more--><\/span><\/p>\n<p><span style=\"color: #999999;\">Prominently displayed in the march\u00e9 (as well as all supermarkets) are fresh lychees. Still on their branches, in a bright red I have never seen, the fruit looked like flower bouquets and smelled just as sweet. My resolve weak, I could not leave without a bundle.<\/span><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-13740\" alt=\"chef morgan\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2013\/12\/DSC009961-580x386.jpg\" width=\"580\" height=\"386\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2013\/12\/DSC009961-580x386.jpg 580w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2013\/12\/DSC009961-350x233.jpg 350w\" sizes=\"auto, (max-width: 580px) 100vw, 580px\" \/><\/p>\n<p><span style=\"color: #999999;\">At home, the fragrant lychees perfumed the apartment and I forgot about the disappearing sun.\u00a0 Instead, I thought of George and Maxim. I\u2019ll explain.<\/span><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-13734\" alt=\"chef morgan \" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2013\/12\/DSC00756-580x386.jpg\" width=\"700\" height=\"506\" \/><\/p>\n<p><span style=\"color: #999999;\">Maxim works at the <i>George V<\/i>, a swanky hotel on <em>avenue George V<\/em> which flows south from the <em>Champs Elys\u00e9es<\/em>. I have never stayed at the hotel, but I am fond of the cozy bar outfitted with a few tables, a small bar, and a fireplace which is particularly inviting in the colder months. Occasionally I meet or take friends there. It is quaint and familiar. When I crave a little Americana, I go there as the hotel is quite popular with Americans and there is as much English spoken as there is French.<\/span><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-13733\" alt=\"chef morgan\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2013\/12\/chef-morgan-580x386.jpg\" width=\"700\" height=\"506\" \/><\/p>\n<p><span style=\"color: #999999;\">The bar has a collection of speciality cocktails and fanciful martinis. This week, I asked Maxim to make something up for me (they do this for many clients, not just me). Maxim made me something which I was quite fond of: a lychee Champagne cocktail, at least that is what I am calling it.\u00a0<\/span><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-13726 alignleft\" title=\"chef morgan\" alt=\"chef morgan cocktail\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2013\/12\/DSC01155-333x500.jpg\" width=\"433\" height=\"600\" \/><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"color: #999999;\">Maxim used lychee liquor, but I used the fresh lychees I found at the market because we are welcoming in a new year and something extra special seemed in order. If you cannot find fresh lychees, you can used canned lychees which I know you can find in the States (even Smart &amp; Final carries them).\u00a0<\/span><\/p>\n<p><span style=\"color: #999999;\">I feel obliged to tell you that this beverage goes down rather <i>smoothly (<\/i>um), so keep that in mind (I am not going to tell you not to drive after drinking because you already know that).<\/span><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"color: #999999;\">In Paris, everyone says <span style=\"color: #ff0000;\"><i>bonne fin d\u2019ann\u00e9e <\/i><\/span>(happy end of the year) until the clock strikes midnight then it becomes \u201c<span style=\"color: #ff0000;\"><i>bonne ann\u00e9e<\/i>.<\/span>\u201d\u00a0<\/span><\/p>\n<p><span style=\"color: #999999;\">Given the time difference, I wish you both.\u00a0<\/span><\/p>\n<p><strong><span style=\"color: #999999;\">LM<\/span><\/strong><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-13722\" alt=\"chef morgan\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2013\/12\/DSC01117-580x386.jpg\" width=\"650\" height=\"456\" \/><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #ff0000;\"><strong>\u00a0lychee Champagne cocktail<\/strong><\/span><\/p>\n<p><span style=\"color: #999999;\">\u00a0<\/span><\/p>\n<p><span style=\"color: #999999;\"><i>1 cocktail<\/i><\/span><\/p>\n<p><span style=\"color: #999999;\">4 &#8211; 4\u00bd ounces Champagne<\/span><br \/>\n<span style=\"color: #999999;\"> 1 tablespoon quality vodka (<i>Georges V<\/i> uses Grey Goose)<\/span><br \/>\n<span style=\"color: #999999;\"> 2 tablespoons lychee syrup<\/span><br \/>\n<span style=\"color: #999999;\"> fresh lychees (as needed)<\/span><\/p>\n<p><span style=\"color: #999999;\"><span style=\"text-decoration: underline;\">lychee syrup<\/span> (makes enough for a bottle of Champagne)<\/span><br \/>\n<span style=\"color: #999999;\"> 20-24 lychees, pits removed<\/span><br \/>\n<span style=\"color: #999999;\"> \u00bd cup superfine sugar<\/span><br \/>\n<span style=\"color: #999999;\"> 2 cups bottled water\u00a0<\/span><\/p>\n<p><span style=\"text-decoration: underline; color: #ff0000;\"><span style=\"text-decoration: underline;\">How to:<\/span><\/span><\/p>\n<ul>\n<li><span style=\"color: #ff0000;\">Lychee Syrup.<\/span><span style=\"color: #999999;\"> Remove shells and pits from lychees (do it over a saucepan so no lychee juice is lost). Add sugar and water to the saucepan. Place saucepan over a medium heat. Cook until you achieve a syrup consistency. Remove from heat. Strain syrup through a sieve into a container, pressing the lychee flesh against the sieve to expel all of the syrup. Cool. The syrup can be made in advance and stored in the refrigerator for a week.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Mix<\/span>. Pour 2 tablespoons of the syrup and 1 tablespoon of vodka in a champagne glass. Add 4-41\/2 ounces of Champagne. If you have fresh lychees, add a little fresh lychee juice into each glass by squeezing the flesh. Mix gently.
