I am a native Californian. I love food. I enjoy wine. Napa Valley lies just east of San Francisco and north of Los Angeles. Napa Valley is home to the majority of California wineries, wholesome food, and fabulous restaurants. Yet, I have never been&#8230;until this weekend.<\/span><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-13833\" alt=\"chef morgan\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/photo2-580x435.jpg\" width=\"700\" height=\"555\" \/><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-13832\" alt=\"chef morgan\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/photo1-580x435.jpg\" width=\"700\" height=\"555\" \/><\/p>\n<p><span style=\"color: #888888;\">Napa Valley is romantic and relaxing. Rural and simple.<\/span><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-13830\" alt=\"chef morgan\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/fence-580x386.jpg\" width=\"700\" height=\"506\" \/><\/p>\n<p><span style=\"color: #888888;\">It is easily accessible by plane, train or automobile.\u00a0 <\/span><\/p>\n<p><span style=\"color: #888888;\">Despite all of this, I held off all these years, waiting for that special time to go. The time came and at the last minute, we drove up to Napa Valley to take advantage of the three day weekend and all Napa Valley had to offer (and we could realistically squeeze into the weekend). Needless to say, my \u201c2014 detox\u201d that had been passing wonderfully, was derailed in a serious, yet delicious way.<\/span><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-13799\" alt=\"chef morgan\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/DSC01482-580x386.jpg\" width=\"700\" height=\"506\" \/><\/p>\n<p><span style=\"color: #888888;\">I will only give you the highlights as it pertains to food and travel.<\/span><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-13802\" alt=\"chef morgan a table\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/DSC01497-580x386.jpg\" width=\"700\" height=\"506\" \/><\/p>\n<p><span><span style=\"color: #888888;\">There was the eight course dinner at Thomas Keller\u2019s French Laundry ..<\/span><span style=\"color: #888888;\">.<\/span><\/span><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-13842\" alt=\"chef morgan\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/photo5-580x435.jpg\" width=\"700\" height=\"555\" \/><\/p>\n<p><span style=\"color: #888888;\">There were the wineries.<\/span><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-13823\" alt=\"chef morgan\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/DSC01731-580x386.jpg\" width=\"700\" height=\"506\" \/><\/p>\n<p><span style=\"color: #888888;\">I finally saw the wineries for the wine labels which are so familiar and those I have grown to love over the years: Mondavi, Rutherford, Folie \u00e0 Deux, Manage \u00e0 Trois, Cakebread, Sutter Home, Beringer, Duckhorm, Stags\u2019 Leap, Clos de Val, Rutherford Hill, and Darioush.<\/span><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-13835\" alt=\"chef morgan \" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/DSC01565-580x386.jpg\" width=\"700\" height=\"506\" \/><\/p>\n<p><span style=\"color: #888888;\">There were the tasting rooms that beckoned us to stop.<\/span><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-13841\" alt=\"chef morgan \" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/DSC01722-580x386.jpg\" width=\"700\" height=\"506\" \/><\/p>\n<p><span style=\"color: #888888;\">There were the wine sellers demonstrating the difference between the years and the crus.<\/span><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-13843\" alt=\"DSC01595\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/DSC015951-580x386.jpg\" width=\"700\" height=\"506\" \/><\/p>\n<p><span style=\"color: #888888;\">There were the private tastings and tours.<\/span><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-13814\" alt=\"chef morgan\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/DSC01623-580x386.jpg\" width=\"700\" height=\"506\" \/><\/p>\n<p><span style=\"color: #888888;\">My personal favorite this weekend was Darioush (Darioush Klaledi is the proprietor and Steve M. Devitt is the winemaker) where I found the surroundings as elegant and as refined as their Cabernet of which I am so very fond. <\/span><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-13844\" alt=\"chef morgan\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/photo6-580x435.jpg\" width=\"580\" height=\"435\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/photo6-580x435.jpg 580w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/photo6-350x262.jpg 350w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/photo6.jpg 2048w\" sizes=\"auto, (max-width: 580px) 100vw, 580px\" \/><\/p>\n<p><span style=\"color: #888888;\">The building was built with Persepolis (the capital of ancient Persia) in mind and it is really something with its own amphitheater.<\/span><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-13816\" alt=\"chef morgan\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/DSC01630-580x386.jpg\" width=\"700\" height=\"506\" \/><\/p>\n<p><span style=\"color: #888888;\">I appreciated the attention to detail &#8211; whether it was the red velvet around the French oak barrels so that they are not stained when the wine is removed or the thoughtfulness of every staff member &#8211; our visit was beyond enjoyable (and we left happier than we arrived&#8230;. <i>sant\u00e9<\/i> !).<\/span><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-13815\" alt=\"chef morgan\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/DSC01628-580x386.jpg\" width=\"700\" height=\"506\" \/><\/p>\n<p><span style=\"color: #888888;\">We were fortunate enough to tour the cellars, the private cellar, and dining rooms. We were able to peek at Darioush Khaledi\u2019s personal and exquisite wine collection including LaTours from the time of\u00a0 WWII. My gentlemen friend was much more well-mannered about such things, while I just stared and drooled.<\/span><\/p>\n<p><span style=\"color: #888888;\">A section of the terrior was purposely left exposed when building the winery so you can see the soil in which the vines are growing.\u00a0 I had to take a photo.\u00a0 It reminded me of Chateauneuf-du-Pape in the south of France where you are shown the difference\u00a0 between the various stones in which the grapes are grown.<\/span><\/p>\n<p><span style=\"color: #888888;\">Still winter, but it feels like summer. As the suns leaves, the nights are cool.<\/span><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-13812\" alt=\"chef morgan\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/DSC01598-580x386.jpg\" width=\"700\" height=\"506\" \/><\/p>\n<p><span style=\"color: #888888;\">The vineyards are in repose and months away from budding.<\/span><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-13806\" alt=\"chef morgan\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/DSC01543-580x386.jpg\" width=\"700\" height=\"506\" \/><\/p>\n<p><span style=\"color: #888888;\">We enjoyed a\u00a0 five course meal with wine at Ang\u00e8le where we were spoiled with hospitality and sparkling wine.\u00a0<\/span><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-13847\" alt=\"chef morgan\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/photo7-580x435.jpg\" width=\"580\" height=\"435\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/photo7-580x435.jpg 580w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/photo7-350x262.jpg 350w\" sizes=\"auto, (max-width: 580px) 100vw, 580px\" \/><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-13848\" alt=\"chef morgan\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/photo8-580x435.jpg\" width=\"700\" height=\"555\" \/><\/p>\n<p><span style=\"color: #888888;\">The quaint towns flowed one into the next &#8211; Calistoga, St. Helena, Yountville, Napa &#8211; with their caf\u00e9s, homeshops, and shops with cookery and kitchenware.<\/span><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-13836\" alt=\"chef morgan\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/photo3-580x435.jpg\" width=\"700\" height=\"555\" \/><\/p>\n<p><span style=\"color: #888888;\"> We lingered in the little towns. Within minutes, I \u00a0found antique kitchen utensils and copper molds as well as a French wood-burning cast-iron stove (although there was no way to get the stove in the car).<\/span><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-13803\" alt=\"chef morgan\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/DSC01505-580x386.jpg\" width=\"580\" height=\"386\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/DSC01505-580x386.jpg 580w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/DSC01505-350x233.jpg 350w\" sizes=\"auto, (max-width: 580px) 100vw, 580px\" \/><\/p>\n<p><span style=\"color: #888888;\">I stumbled upon a Farmer\u2019s Market which I accidentally discovered looking for a cappuccino. I chatted with local farmers and patrons who told me what items I must try.\u00a0<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #888888;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-13805\" alt=\"chef morgan\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/DSC01517-580x386.jpg\" width=\"700\" height=\"506\" \/><\/span><\/p>\n<p>\u00a0<span style=\"color: #888888;\">I managed to return to the hotel with bread, fruit, salt, and salmon. What else could I do?<\/span><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-13804\" alt=\"chef morgan\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/DSC01508-580x386.jpg\" width=\"580\" height=\"386\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/DSC01508-580x386.jpg 580w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/DSC01508-350x233.jpg 350w\" sizes=\"auto, (max-width: 580px) 100vw, 580px\" \/><\/p>\n<p><span style=\"color: #888888;\">Will I return to Napa Valley ? Perhaps. It would be foolish not to as there is so much to see, so many excellent restaurants and vineyards, and it is beautiful.\u00a0<\/span><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-13810\" alt=\"chef morgan\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/DSC01590-580x386.jpg\" width=\"700\" height=\"506\" \/><\/p>\n<p><span style=\"color: #888888;\">The drive back to Los Angeles was long and I think we were in a bit of a post-wine tasting and food-sampling haze. As we drove, the sky color reminded me of \u00a0the blood oranges which are in season and filling the farmer&#8217;s markets. When I returned to Los Angles, and resumed my 2014 marathon detox and recipe writing, I thought of that pink, lush sky and this week\u2019s recipe was born.<\/span><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-13831\" alt=\"chef morgan\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/01\/photo-580x435.jpg\" width=\"700\" height=\"555\" \/><\/p>\n<p><span style=\"color: #888888;\">This winter salad is filled with things in the markets now: escarole, radicchio, arugula, and blood oranges. Set aside. You should season the meat the day before (or at least a few hours before) you cook it.<\/span><\/p>\n<p><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Make Dressing<\/span>. Place juice and vinegar in a small bowl. Whisk in the oil and salt. Adjust seasoning. Set aside.<\/span><\/p>\n<p><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Make Salad.<\/span> Leaf escarole, fris\u00e9e, and radicchio. Discard cores and the thick, white stems of the escarole. Tear leaves into smaller pieces. Combine greens, herbs, and blood orange supremes in a bowl. Dress salad right before service.<\/span><\/p>\n<p><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Cook Steaks.<\/span> Pan fry steaks by cooking on both sides over a medium flame until each side is browned. Place pan in an oven preheated to 350 degrees Fahrenheit. \u00a0CAREFULLY remove the \u00a0pan when the steaks register an internal temperature of 122-123 degrees Fahrenheit on a meat thermometer. Let the steaks rest for five minutes before slicing. <\/span><\/p>\n<p><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Dress Salad.<\/span> Dress salad by adding a little dressing at a time\u00a0 (you may not use all of it).
