This year\u00a0it is about souffl\u00e9s and \u201crising to the occasion\u201d that phrase we so often hear. The recipe is for a classic chocolate souffl\u00e9 and you can find it in the following post. It is an exciting time and I see you both eager to test your wings (and eyeing my shoe closet with a more relevant interest\u2026). As you both ready yourself for the new challenges and opportunities that await I cannot help but think of not only the excitement that next year will\u00a0bring but also the nervous anticipation that will begin to set in after the graduation parties\u00a0and the distractions of summer. Anxious thoughts about what is to come when facing new\u00a0circumstances (whether it be a school, a job, or a new place to live)\u00a0are universal and never go away with age (we just learn to handle them better). When facing new situations <em>every<\/em> person questions themselves and their abilities to some degree. Thoughts like: How different will this be? What if I am not good at things? What if I fail? Can I succeed in my new circumstances? Will I be able to \u201crise to the occasions\u201d that come my way?<\/span><\/p>\n<p><span style=\"color: #808080;\">When you have these thoughts I want you to remember this: if \u201clife is like a box of chocolates\u201d (and you never know what you will get), then you are like a souffl\u00e9 and souffl\u00e9s always rise.<\/span><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-14218\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/05\/oven-rise-580x386.jpg\" alt=\"chef lisa morgan\" width=\"813\" height=\"541\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/05\/oven-rise-580x386.jpg 580w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/05\/oven-rise-350x233.jpg 350w\" sizes=\"auto, (max-width: 813px) 100vw, 813px\" \/><\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\"><b>souffl\u00e9 = souffl\u00e9 base <\/b><span style=\"color: #808080;\">(flavor\u00a0 +\u00a0 foundation)<\/span>\u00a0<b>+ leavening agent<\/b><\/p>\n<p><span style=\"color: #808080;\">Souffl\u00e9s are versatile. They come in all shapes, sizes, different flavors, and colors. They can be sweet or savory. Regardless of the differences, a souffl\u00e9 is composed of two parts: (1) the base which is the combination of the flavor and the foundation; (2) and the leavening agent.<\/span><\/p>\n<p><span style=\"color: #808080;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-14196\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/05\/DSC02331-580x365.jpg\" alt=\"chef morgan\" width=\"795\" height=\"500\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/05\/DSC02331-580x365.jpg 580w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/05\/DSC02331-350x220.jpg 350w\" sizes=\"auto, (max-width: 795px) 100vw, 795px\" \/><\/span><\/p>\n<p><span style=\"color: #808080;\">A souffl\u00e9 flavor can be made of a fruit or vegetable pur\u00e9e, chocolate, cheese, citrus zest, herbs, and\/or liquor. The chosen flavor is what makes the souffl\u00e9 a chocolate souffl\u00e9 or a blue cheese souffl\u00e9.<\/span><\/p>\n<p><span style=\"color: #808080;\">The foundation of a souffl\u00e9 is equally versatile but the ingredient combination lays the groundwork for the souffl\u00e9&#8217;s structure. It typically involves a starch: egg yolks, flour or a roux (butter with flour); and a liquid (i.e. b\u00e9chamel for savory souffl\u00e9s or pastry cream for sweet souffl\u00e9s). The starch in the foundation will strengthen the air bubble walls to set the souffl\u00e9 and the moisture will contribute to its rise. The foundation must be the proper consistency: If it has too much moisture (too liquidly) it will rise before the egg proteins can set the shape and it will pour over the sides of the dish. If the foundation is too thick it will not rise very much.\u00a0<\/span><\/p>\n<p><span style=\"color: #808080;\">When the flavor and the foundation are\u00a0combined you have the souffl\u00e9 base.<\/span><\/p>\n<p><span style=\"color: #808080;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-14203\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/05\/peaks-373x500.jpg\" alt=\"chef morgan\" width=\"582\" height=\"780\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/05\/peaks-373x500.jpg 373w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/05\/peaks-224x300.jpg 224w\" sizes=\"auto, (max-width: 582px) 100vw, 582px\" \/><\/span><\/p>\n<p><span style=\"color: #808080;\">A leavening agent causes food to rise. There are different types. Yeast is a living leavening agent which creates gas that\u00a0makes bread rise. Baking soda and baking powder are chemical leavening agents that react with liquid and\/or oven heat to give a product height.\u00a0In a souffl\u00e9, the whipped egg whites act as a leavening agent because the air bubbles in the whites (created when the whites are whipped to form stiff peaks) expand with the heat of the oven. The oven heat also causes the moisture in the batter to vaporize into steam (there is moisture in the egg yolks, the milk, the butter, etc). Both the steam and the expanding air bubbles cause the souffl\u00e9 to rise up out of its dish.\u00a0(source: Harold McGee, <em>On Food and Cooking<\/em>, Scribner (First Revised Edition\u00a02004).<\/span><\/p>\n<p><span style=\"color: #808080;\">If you put a souffl\u00e9 in a hot oven it will always rise. Always. The only time a souffl\u00e9 does not rise is if you forget to spoon the batter in the dish. The only question then is <i>how high <\/i>the souffl\u00e9 will rise<i> <\/i>and whether it can <i>maintain its shape and for how long<\/i>. Those issues are determined by whether the egg whites were properly whipped into stiff peaks and whether the base is the proper consistency.<\/span><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-14212\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/05\/DSC05361-580x386.jpg\" alt=\"chef morgan\" width=\"690\" height=\"459\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/05\/DSC05361-580x386.jpg 580w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/05\/DSC05361-350x233.jpg 350w\" sizes=\"auto, (max-width: 690px) 100vw, 690px\" \/><\/p>\n<p><span style=\"color: #808080;\">When you remove a souffl\u00e9 from the oven (merely opening the oven door will NOT do it) the internal temperature of the souffl\u00e9 begins to cool and as it does the expanded air bubbles begin to shrink and the vapor returns to moisture. This is why a souffl\u00e9 falls back into its dish. If you put the souffl\u00e9 back in the oven, it will rise again (although not as high as the first time).<\/span><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-14225\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/05\/IMG_1202.jpg\" alt=\"chef morgan\" width=\"694\" height=\"445\" \/><\/p>\n<p style=\"text-align: center;\"><b>you, the souffl\u00e9<\/b><\/p>\n<p><span style=\"color: #808080;\"><span style=\"color: #ff0000;\"><span style=\"color: #808080;\">You are like a souffl\u00e9. <\/span><\/span><\/span><\/p>\n<p><span style=\"color: #808080;\"><span style=\"color: #ff0000;\"><span style=\"color: #808080;\">Your<\/span>\u00a0flavor<\/span> is akin to your personality, your talents, and your shortcomings. Your flavor is what makes you\u00a0unique.\u00a0<\/span><\/p>\n<p><span style=\"color: #808080;\">Your <span style=\"color: #ff0000;\">foundation<\/span> is the sum of those things your family, church, and school have instilled in you since you were young. It is your character,\u00a0values, morals, manners, and education. It is the core of who you are and combined with your flavor, this is your base.\u00a0<\/span><\/p>\n<p><span style=\"color: #808080;\">The heat of the oven is like\u00a0life and all of its trials, challenges, opportunities, tests, and lessons that you will encounter next year and throughout your lives.<\/span><\/p>\n<p><span style=\"color: #808080;\">The <span style=\"color: #ff0000;\">leavening agent<\/span> is your actions, your words, your thoughts, and basically what you do or fail to do with your talents and character. Rising to the occasion is never about having enough\u00a0talent or knowledge,\u00a0it is about your effort and what you do to meet the challenges when life &#8220;heats&#8221; up.<\/span><\/p>\n<p><span style=\"color: #808080;\">This graduation, as you face new exciting challenges and situations in your lives, keep the following in mind:<\/span><\/p>\n<ul>\n<li><span style=\"color: #808080;\">Do the best you are capable of doing. Anything less is a failure to fill the souffl\u00e9 dish.\u00a0<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #808080;\">\u201cFailure\u201d is an omission or inability to perform or act.\u00a0When you give it your best effort, THERE IS NO SUCH THING AS FAILURE.\u00a0<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #808080;\">THERE IS NO SUCH THING AS A MISTAKE. Unintended results are often labeled as \u201cmistakes\u201d but sometimes\u00a0the unintended result is better than the <em>intended<\/em>\u00a0one. A delicious example is when one of the Tartin sisters made her usual tart and accidentally placed the apples and crust in the oven upside-down. This &#8220;mistake&#8221; &#8211;\u00a0a caramelized apple tart \u00a0&#8211; became one of your favorites: a <i>tarte tartin<\/i>.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #808080;\">TRY and TRY and TRY again.\u00a0<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #808080;\">There is value in the process. Not receiving the grade you wanted, the part in the play, or even the end of a relationship all of these experiences have worth regardless of the end result. It is important to remember that in the process you will have learned something: how to do or not to do things or how to do things better; you learned something about yourself and what you want and what you don\u2019t; or maybe you got a push in a different direction that is better for you. As Thomas Edison said, \u201cI have not failed. I\u2019ve just found 10,000 ways that won\u2019t work.\u201d<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #808080;\">Set goals for yourself but be open to alternative\u00a0options along the way.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #808080;\">Be open to the fact that despite your best efforts, life may take you in a different direction and that could be even better for you. Samuel Morse is an example. Morse loved to paint and was a successful painter but\u00a0never succeeded in the way he would have liked. When he was turned down for a painting project he turned his efforts elsewhere and invented the telegraph and the MORSE code. (Source: McCullough, David, The Greater Journey: Americans in Paris (2011), Simon &amp; Schuster).<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #808080;\">Be long-sighted. Remember that life is a collection of both \u201cbad\u201d days (that do not meet your expectations) and \u201cgood\u201d days (those that go the way you want). Both are necessary and cannot exist without the other.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #808080;\">Face challenges wisely. Do not overextend yourself; Despite your best intentions, taking on too much will result in a disservice to yourself, the activities you take on, and the people that rely on you.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #808080;\">Remember that how you conduct yourself in achieving your goals is equally as important as the result. At all times conduct yourself with dedication, integrity, and kindness.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #808080;\">Success and self-advancement should never come at the expense of another.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #808080;\">Be gracious in moments of victory as well as those of defeat.<\/span><\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-14204\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/05\/trophy-500x500.jpg\" alt=\"chef morgan\" width=\"561\" height=\"561\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/05\/trophy-500x500.jpg 500w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/05\/trophy-175x175.jpg 175w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/05\/trophy-300x300.jpg 300w\" sizes=\"auto, (max-width: 561px) 100vw, 561px\" \/><\/p>\n<ul>\n<li><span style=\"color: #808080;\">Think about your decisions and actions before you make them. Thoughtful deliberation will eliminate future regrets<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #808080;\">Encourage others as you hope they would encourage you.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #808080;\">Listen to your intuition. You will intuitively know if you are on the right path and if something or\u00a0someone is good for you or not. Do not minimize or rationalize-away that inner voice.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #808080;\">If you have gotten off track and strayed from your core;\u00a0 if you have said or done things that you know you shouldn\u2019t have, get back on course and make honest amends for the things you have done or said.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #808080;\">Be true to yourself and who you are. Do not try to be someone else or do things like your peers because it is en vogue. Life does not allow insincerities.<\/span><\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-14260\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/05\/chefmorganida-580x435.jpg\" alt=\"chefmorganida\" width=\"580\" height=\"435\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/05\/chefmorganida-580x435.jpg 580w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/05\/chefmorganida-350x262.jpg 350w\" sizes=\"auto, (max-width: 580px) 100vw, 580px\" \/><\/p>\n<ul>\n<li><span style=\"color: #808080;\">Self-reflect. Use constructive criticism positively. Do not give negativity and ill-intended criticism credence.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #808080;\">Nurture the leader within yourself.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #808080;\">Be gracious. Accept compliments with sincerity but do not let them go to your head.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #808080;\">Accept that you will not be great in everything and that is okay. Focus on developing your strengths.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #808080;\">Rejection, in any form, is an opportunity to explore a different path. I promise that the \u201cworst moments in your life\u201d will be your biggest opportunities for growth.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #808080;\">Continually challenge yourself mentally, physically, spirituality, and emotionally.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #808080;\">Try new things: a new sport, food, perspective.<\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-14223\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/05\/P1400090-375x500.jpg\" alt=\"chef morgan\" width=\"458\" height=\"611\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/05\/P1400090-375x500.jpg 375w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/05\/P1400090-225x300.jpg 225w\" sizes=\"auto, (max-width: 458px) 100vw, 458px\" \/><\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li><span style=\"color: #808080;\">The glass should always be &#8220;half-full.&#8221; If you think it is \u201chalf-empty\u201d then replenish your perspective until it is \u201chalf-full\u201d again.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #808080;\">Never underestimate the power of sleep. Sometimes things seem worse than they are just because we are tired.<\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-14226\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2014\/05\/IMG_1217.jpg\" alt=\"chef morgan\" width=\"507\" height=\"339\" \/><\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li><span style=\"color: #808080;\">Know your limits. Know when to walk away from situations and people.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #808080;\">Read everything and in as many languages as you are able.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #808080;\">Believe in yourself.
