style=\"color: #808080;\">This recipe is super simple and great to keep on hand in the freezer as a \u201cgo to\u201d dessert.\u00a0 It can be served alone, accompanying a baked dessert, or with a glass of\u00a0 Calvados (apple brandy).<\/span><\/p>\n<p><span style=\"color: #808080;\">I have given examples of apples I like to use, but do not let my list limit your creativity.\u00a0 With 15,000 varieties of apples, you have many options.<\/span><\/p>\n<p><span style=\"color: #808080;\">I wrote this recipe to take advantage of an apple\u2019s color and vitamins.\u00a0 First, the apples are simmered in apple juice with the skins on, giving the sorbet a pretty pink color and you the benefit of the vitamin C and antioxidant compounds concentrated in the apple\u2019s peel.\u00a0 Also, I add no sugar.\u00a0 If you use fresh, ripe apples, you do not need it. \u00a0 Lastly,\u00a0 I grated some of the uncooked apple peel, creating an apple \u201czest\u201d to mix in the sorbet.\u00a0 You can leave the zest out if you choose, but I think the red flakes\u00a0 (or green flakes as the case may be) make the sorbet visually interesting as well as add a little texture. <\/span><em><span #808080;\">3 cups chopped ripe apples (i.e., Red Jonathan, Braeburn, Stayman Winesap, Pink Lady), cored<br \/>\n<\/span><span style=\"color: #808080;\">1\/4 cup Calvados (optional)<br \/>\n<\/span><span style=\"color: #808080;\">1 teaspoon fresh lemon juice<br \/>\n<\/span><span style=\"color: #808080;\">2 tablespoons apple zest (or to taste)<\/span><\/p>\n<p><span style=\"color: #808080;\"> <\/span><span style=\"color: #808080;\"><span style=\"color: #ff0000;\"><span style=\"text-decoration: underline;\">how to<\/span><\/span><span style=\"color: #ff0000;\">:<\/span><\/span><\/p>\n<ul>\n<li><span style=\"color: #808080;\"><span style=\"color: #ff0000;\">Prepare Appl<span style=\"color: #ff0000;\">e<\/span><\/span><span style=\"color: #ff0000;\">s<\/span>.\u00a0 Using a microplane, grate zest from apple peel.\u00a0 Reserve zest.\u00a0 Core apples and dice (leave remaining peel on).<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #808080;\"><span style=\"color: #ff0000;\">Simmer<\/span>.\u00a0 In a sauce pan, combine cider, apple and Calvados.\u00a0 Simmer until apples are tender (about 20 minutes).<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #808080;\"><span style=\"color: #ff0000;\">Mash<\/span>.\u00a0 Pass the cooked apples through a food mill using the fine disk.
