While the decorations and songs are festive, it is the smell of roasted chestnuts, mulled wine, and baked treats that transport us to memories of family meals, gatherings around a fire, and baking holiday cookies. For many people, the smell of gingerbread is synonymous with the holidays. Filling your home with a little holiday sugar and spice this season was the inspiration for this week\u2019s <span style=\"color: #ff0000;\"><em>simple pleasure<\/em>:<em> <\/em><em>pain d\u2019\u00e9pice (with ginger and honey cream cheese spread).<!--more--><\/em><\/span><\/span><\/p>\n<p style=\"text-align: center;\"><span class=\"Apple-style-span\" style=\"color: #888888;\"><em><span style=\"color: #ff0000;\"><a href=\"http:\/\/www.chefmorgan.com\/sugar-and-spice-it-is-all-nice-pain-d%e2%80%99epice-with-ginger-honey-cream-cheese-spread\/painepcie-cutter\" rel=\"attachment wp-att-4695\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-4695\" title=\"www.chefmorgan.com\" alt=\"\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2011\/12\/painepcie-cutter-350x262.jpg\" width=\"480\" height=\"410\" \/><\/a><\/span><\/em><\/span><\/p>\n<p><span class=\"Apple-style-span\" style=\"color: #888888;\"><em><span style=\"color: #ff0000;\">Pain d\u2019\u00e9pice<\/span> (<\/em>\u201cspice bread\u201d) is a loaf cake particularly popular in the Alsace region of France. It is sometimes topped with candied fruit and\/or nuts and often served with tea or coffee. Traditional<span style=\"color: #ff0000;\"> <em>pain d\u2019\u00e9pice <\/em><\/span>is made with wheat and rye flours and honey both of which are used to to create a <em>p\u00e2te-m\u00e8re<\/em>, a paste of honey and flour that is fermented over a series of days. The spice combination (for which the bread gets its name) varies with the region in which you find it, but it generally includes a combination of ground cinnamon, cloves, green anise, ginger, and cardamom. <em><span style=\"color: #ff0000;\">M\u00e9lange pain d\u2019\u00e9pice<\/span><\/em> is a pre-measured mixture of <span style=\"color: #ff0000;\"><em>pain d\u2019\u00e9pice <\/em><\/span>spices that you can find in all French grocery stores and on the internet.\u00a0<\/span><\/p>\n<p style=\"text-align: center;\"><span class=\"Apple-style-span\" style=\"color: #888888;\"><a href=\"http:\/\/www.chefmorgan.com\/sugar-and-spice-it-is-all-nice-pain-d%e2%80%99epice-with-ginger-honey-cream-cheese-spread\/tea-cubes\" rel=\"attachment wp-att-4696\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-4696\" title=\"www.chefmorgan.com\" alt=\"\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2011\/12\/tea-cubes-350x267.jpg\" width=\"280\" height=\"214\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2011\/12\/tea-cubes-350x267.jpg 350w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2011\/12\/tea-cubes-580x443.jpg 580w\" sizes=\"auto, (max-width: 280px) 100vw, 280px\" \/><\/a><\/span><\/p>\n<p style=\"text-align: left;\"><span class=\"Apple-style-span\" style=\"color: #888888;\">This is not your grandmother\u2019s <span style=\"color: #ff0000;\"><em>pain d\u2019\u00e9pice.\u00a0<\/em><\/span>In fact, it is more of a gingerbread<em>&#8211;<span style=\"color: #ff0000;\">\u00e9pice<\/span><\/em> cake.\u00a0<\/span><\/p>\n<p><span class=\"Apple-style-span\" style=\"color: #888888;\">I use a modified muffin method so it is very simple, no <em><span style=\"color: #ff0000;\">p\u00e2te-m\u00e8re<\/span>.<\/em> Instead of only honey this recipe also uses a combination of rich brown sugars and\u00a0 blackstrap molasses which make the spice \u201cbread\u201d moist and give it a lush deep brown color. I use third-boiled molasses (blackstrap molasses) because it is less sweet than first-boiled molasses and has the health benefits of calcium, iron, and potassium (however, some brands are too thick and\/or bitter so be careful about the one you choose). Included is a recipe for an easy cream cheese spread made with honey and ginger.\u00a0 The spread is optional as the <em><span style=\"color: #ff0000;\">pain d\u2019\u00e9pice<\/span><\/em> is delicious on its own. However, if you are using a brownie pan, miniature loaf pans, or a muffin tin, <em>be careful of over-baking<\/em>&#8230;<span style=\"color: #ff0000;\"><em>pain d\u2019\u00e9pice <\/em><\/span>brownies are delicious but they have a tendency to be dry because the large surface area causes them to bake very quickly. color: #ff0000;\"><span class=\"Apple-style-span\" style=\"text-decoration: underline;\">how to:<\/span><\/span><\/p>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Grease Pan.<\/span> Spray a loaf pan(s) with non-stick spray.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Melt Butter.<\/span> Place 2 tablespoons butter in a small saucepan over a low flame. Melt butter. Once melted, set aside to cool.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Combine Dry Ingredients<\/span>. In a bowl, combine the flours, salt, and baking soda. Set aside.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Combine Wet Ingredients<\/span>. In the bowl of a stand alone mixer, combine the eggs, sugars, honey, molasses, zests, extracts, and spices.\u00a0 Mix on low speed until combined.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Add Dry.\u00a0<\/span> Add the dry ingredients to wet ingredients. Mix until combined.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Add Melted Butter<\/span>. Stir in the (cooled) melted butter until combined.\u00a0<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Pan.<\/span> Pour the batter into the prepared pan(s) (a little over \u00bd full).<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Bake.<\/span> Place the pan on a baking sheet and place it in an oven preheated to <span style=\"color: #ff0000;\">350 degrees Fahrenheit.<\/span> Bake until the bread is set in the middle and a toothpick inserted into the middle comes out almost completely clean.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Cool.<\/span> Let the<span style=\"color: #ff0000;\"><em> pain d\u2019\u00e9pice<\/em><\/span> cool in the loaf pan for a few minutes and then lift it out of the pan and let it finish cooling on a wire rack.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Store<\/span>. The bread will store at room-temperature wrapped in plastic for about a week. You can freeze it as well.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Make Spread (optional).<\/span> Finely mince the crystalized ginger with a chef\u2019s knife or a small food processor. Add the cream cheese, milk, and honey to the ginger and stir until combined. The spread can be stored in the refrigerator in an air-tight container for about 5 days.
