\/>\n<\/span><\/p>\n<p><span style=\"color: #999999;\"> <\/span><\/p>\n<ul>\n<li><span style=\"color: #999999;\">Developing the <span style=\"color: #ff0000;\">flavor <\/span>(Essentially, what is the souffl\u00e9 supposed to taste like?\u00a0 Here, apples and cheese);<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\">Making the <span style=\"color: #ff0000;\">structure <\/span> (This is the foundation for the souffl\u00e9, what gives the souffl\u00e9 its strength.\u00a0 Here, it is a classic spice-infused b\u00e9chamel bound with egg yolks); and<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\">Creating a <span style=\"color: #ff0000;\">lift <\/span>(This is what makes it rise.\u00a0 In souffl\u00e9s the rise is due to the air trapped in the whisked egg whites that turns to steam and expands with oven heat).<\/span><\/li>\n<\/ul>\n<p><span style=\"color: #999999;\">The first two steps can be done ahead of time and stored in the refrigerator for up to two days. \u00a0 When you are ready to make it, let it come to room temperature, whisk the eggs, fold into the base and bake.<\/span><\/p>\n<p><span style=\"color: #999999;\"> <\/span><span style=\"color: #999999;\">This souffl\u00e9 recipe is perfect for Fall and it is versatile as it can be served as a side-dish or a dessert (after all, it really is apple pie just re-configured). \u00a0As written, this recipe is also user-friendly because you have less chance of a fallen souffl\u00e9\u00a0 (the sugar in the egg whites acts as a stabilizer and the lower oven temperature allows the souffl\u00e9 to cook in the middle, rather than be molten).<!--more--><br \/>\n<\/span><\/p>\n<p><span style=\"color: #999999;\"> The recipe calls for 4 or<\/span><span style=\"color: #999999;\"> 5 year <span style=\"color: #ff0000;\">aged Gouda<\/span> which is delicious with apples.\u00a0 Aged Gouda has a rich flavor with butterscotch\/caramel overtones and small salty pieces in it (which occur naturally in cheese the longer it is aged).\u00a0 \u00a0 Some popular aged Goudas are <span style=\"color: #ff0000;\">Beemster, Rembrandt <\/span>and <span style=\"color: #ff0000;\">Saenkanter<\/span>.\u00a0 Aged Gouda is sold in cheese shops (some grocery stores are beginning to carry it such as Whole Foods).\u00a0 If you cannot find aged Gouda, you can use another hard, grating cheeses such as Gruy\u00e8re, Cheddar, Comt\u00e9, or Mimolette.\u00a0 Make sure you finely grate it and it is incorporated in the base while it is warm as the oven heat is not hot enough to melt largely grated hard cheese.<\/span><\/p>\n<p><span style=\"color: #999999;\">As for the apples, you can use a variety of different apples or a combination of a few. \u00a0 My favorites to use \u00a0are\u00a0<span style=\"color: #ff0000;\">Braeburn, Cortland, Crispin (Mutsu), Fuji<\/span>, and <span style=\"color: #ff0000;\">Pink Lady<\/span>. \u00a0 Once I was asked:\u00a0 \u201cCan I use store-bought apple sauce instead?\u201d \u00a0 A hush fell over the room. \u00a0 My response: \u201c&#8230; I am going to pretend I did not hear that.\u201d \u00a0 I was joking of course and the answer is that you can use store-bought applesauce although the result will be average at best.<\/span><\/p>\n<p><span style=\"color: #999999;\"> <\/span><span style=\"color: #999999;\">If you use store-bought apple sauce the taste will not be the same because you do not know the quality of apples used and most of the time apple sauce has water added to it. \u00a0 In addition to a loss of flavor, you lose control of texture (i.e., you can pur\u00e9e the apple mixture to your liking &#8211; if you want some apple chunks in the souffl\u00e9 &#8211; you can pur\u00e9e the apples less).\u00a0 Lastly,\u00a0 store-bought apple sauce contains a lot moisture and thus, the recipe ratio can thrown off.\u00a0 Although you can minimize this by cooking some of the moisture out by placing the sauce in a saut\u00e9 pan and cooking it until it is drier consistency, it \u00a0is not the same.<\/span><\/p>\n<p><span style=\"color: #999999;\"> <\/span><span style=\"color: #999999;\">I think you will find that the little extra effort of pur\u00e9eing your own apples and using a quality cheese will result in a delicious treat.\u00a0 Whatever you do, I hope Dishes<\/span>.\u00a0 Butter souffl\u00e9 dishes and sprinkle with granulated sugar.\u00a0 Shake off the excess.\u00a0 If you want the souffl\u00e9 to have a straight rise, line the inside of the souffl\u00e9 dish with a buttered and sugared paper which comes two inches above the top of the souffl\u00e9 dish.\u00a0 You can put the paper on the outside but \u00a0the edges will not be as straight (which I think is actually nicer for savory souffl\u00e9s).<\/span><\/li>\n<\/ul>\n<p><span style=\"color: #999999;\">(1) <span style=\"text-decoration: underline;\">Make Flavor Base<\/span><\/span><\/p>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Reduce Apple Juice<\/span>.\u00a0 Place\u00a0 1\u00a0 1\/2\u00a0 cups of apple juice in a sauce pan over medium-high heat.\u00a0 Cook until juice is reduced to half\u00a0 ( 3\/4\u00a0 cup). \u00a0 Set aside.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Prepare Apples<\/span>.\u00a0 Wash, peel, core, and dice apples.\u00a0 Place a large saut\u00e9 pan over medium-high heat.\u00a0 Once pan is warm, add 2 tablespoons butter.\u00a0 When butter has melted, add cinnamon and sugar. \u00a0 Add apples and toss in cinnamon-sugar.\u00a0 Add a pinch of\u00a0 kosher salt.\u00a0 Cook apples until tender (can easily insert a fork). \u00a0 Add apple juice reduction. \u00a0 Simmer for 5 minutes.\u00a0 Remove from heat.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Pur\u00e9e<\/span>.\u00a0 Pour apples and juice into deep bowl or a blender.\u00a0 Use an immersion blender (or the blender) to pur\u00e9e apples and juice until smooth, leaving a few small apple chunks to add texture. \u00a0 Set aside.<\/span><\/li>\n<\/ul>\n<p><span style=\"color: #999999;\"> <\/span><span style=\"color: #999999;\">(2)<span style=\"text-decoration: underline;\">Make Souffl\u00e9 Base<\/span><\/span><\/p>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Scald Milk<\/span>. In a sauce pan over high heat, scald the milk, pepper, nutmeg, and brown sugar.\u00a0 Set aside.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Make Roux<\/span>. Melt 4 tablespoons butter in saut\u00e9 pan.\u00a0 Once melted, whisk in flour.\u00a0 Continue to cook (and whisk) for about 2-3 minutes, until flour taste is gone.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Add Milk (Make A B\u00e9chamel)<\/span>.\u00a0 Whisk scalded milk mixture into roux. Remove from heat.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Add Yolks.<\/span> Off the heat (or you will have scrambled eggs), add yolks into mixture one at a time.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Add Flavor<\/span>.\u00a0 Pour the b\u00e9chamel\u00a0 into the apple pur\u00e9e.\u00a0 Add the grated cheese.\u00a0 Stir to incorporate.\u00a0 Adjust seasoning (taste before you add salt). \u00a0 Your souffl\u00e9 base is done.\u00a0 You can store it in an air-tight container in the refrigerator for up to two days.\u00a0 However, before you finish the recipe, let it come to room temperature or warm it over a bain marie.<br \/>\n<\/span><span style=\"color: #999999;\">Make It Rise\u00a0 (leavening power)<\/span><\/li>\n<\/ul>\n<p><span style=\"color: #999999;\">(3)\u00a0<span style=\"text-decoration: underline;\">Make It Rise (leavening power)<\/span><br \/>\n<\/span><\/p>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Whisk Until Foamy<\/span>.\u00a0 Using an electric mixer with the whisk attachment, beat egg whites on whites and continue to whisk until the whites hold firm peaks.\u00a0 If your whites look a little lumpy instead of \u201cpeaky\u201d you over-mixed and the whites are breaking down.\u00a0 You can start-over with fresh eggs, or add another egg white to the broken whites.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Add Egg Whites To Base<\/span>.\u00a0 Stir 1\/3 of the egg whites into apple base.\u00a0 Fold in the remaining whites using a large spoon or spatula.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Bake<\/span>.\u00a0 Spoon mixture into prepared souffl\u00e9 dish(es).\u00a0 Bake in an oven preheated to <span style=\"color: #ff0000;\">375 degrees Fahrenheit<\/span> for about 35-40 minutes until puffed and golden brown and the center is set. <\/span><\/li>\n<\/ul>\n<p><span style=\"color: #999999;\"> <\/span><\/p>\n<p><span style=\"color: fall?\u00a0 Souffl\u00e9s generally fall because the egg whites are either under-whisked or over-whisked, the oven temperature is too low, and\/or\u00a0 the oven door was opened or the souffl\u00e9s were otherwise disturbed and not fully set. \u00a0 All of these can be prevented.<\/span><\/p>\n<p><span style=\"color: #999999;\"> <\/span><span style=\"color: #999999;\">What if the souffl\u00e9 falls?\u00a0 If your souffl\u00e9 falls, generally it will not re-rise even if returned to the oven immediately.\u00a0 If serving this as a dessert, you can place a ice cream quenelle on the top.\u00a0 Or remove the fallen souffl\u00e9 from the souffl\u00e9 dish and serve it in a round shape and call it a \u201ctimbale\u201d or serve in a small side dish. \u00a0 Alternatively, make a twice-baked souffl\u00e9:\u00a0 hollow out a peeled apple, rub the apple with lemon juice, stuff the hollowed-out apple with the fallen (and cooled) souffl\u00e9 and bake it in the oven at 350 degrees Fahrenheit \u00a0until the apple is tender (this is also a great way to use the souffl\u00e9 left-overs, assuming you have any.)<\/span><\/p>\n<p><span style=\"color: #999999;\"> <\/span><\/p>\n<p
