The first is that the food served primarily consists of hand to mouth heavy foods that involve meat, sauces, and dips (<span class=\"famos-shop click famos-annotation refid-11SZX\" title=\"famos chili\">chili<\/span> is allegedly the favorite). The second is that throughout the game, the guests tend to break off into groups and the division is generally gender based. The gorgeous weather and the markets filled with citrus inspired me to bring a little lightness to your Super Bowl plates with something all party guests will enjoy, no matter the room they end up in, and so<span style=\"color: #ff0000;\"> <em>ch\u00e8vre and grapefruit panna cotta<\/em><\/span>, is this week\u2019s<span style=\"color: #ff0000;\"><em> simple pleasure<\/em><\/span>.<!--more--><\/span><\/p>\n<p><span style=\"color: #999999;\">Panna cotta (in Italian \u201ccooked cream\u201d) is easy to make and perfect for large gatherings because you can do it in advance and serve it chilled. While panna cotta can be garnished with a variety of things, including syrups, honey, fresh fruit, nuts and\/or sauces, this recipe uses pink grapefruit&#8230;proof that you can do something delicious with grapefruit that extends beyond halving it for breakfast.<\/span><\/p>\n<p><span style=\"color: #999999;\">The active time for this recipe is 10 minutes. After blooming the gelatin, you dissolve it in heated cream. The cooked cream is then whisked into the grapefruit, honey and goat cheese combination. Pour the mixture into <span class=\"famos-shop click famos-annotation refid-11T00\" title=\"famos ramekins\">ramekins<\/span>, place it in the refrigerator and forget about it until you are ready to serve it.&nbsp;<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"color: #999999;\">I served this dessert in my classes this week. It was an interesting week because my classes were either filled completely with men or completely filled with women. The gender breakdown reminded me of Super Bowl parties. Both genders liked the dessert equally so I thought the recipe was something good to \u201cpass\u201d to all of you. As a Super Bowl host at least you know you will have a touchdown dessert that will give your party a favorable finish, no matter which team wins, or in which room your guests congregate.&nbsp;<\/span><\/p>\n<p><span style=\"color: #ff0000;\"><em>Je vous souhaite un bon app\u00e9tit !<\/em><\/span><\/p>\n<p><span style=\"color: #333333;\"><strong><span>LM&nbsp;<\/span><\/strong><\/span><\/p>\n<p style=\"text-align: center;\">&nbsp;<a href=\"http:\/\/www.chefmorgan.com\/chevre-and-grapefruit-panna-cotta\/close-with-spoon\" rel=\"attachment wp-att-5563\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-5563\" title=\"ch\u00e8vre and grapefruit panna cotta\" alt=\"ch\u00e8vre and grapefruit panna cotta with spoon\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/02\/close-with-spoon-350x262.jpg\" height=\"262\" width=\"350\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/02\/close-with-spoon-350x262.jpg 350w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/02\/close-with-spoon-580x435.jpg 580w\" sizes=\"auto, (max-width: 350px) 100vw, 350px\" \/><\/a><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #ff0000;\"><strong>ch\u00e8vre and grapefruit panna cotta<\/strong><\/span><\/p>\n<p><span style=\"color: #999999;\">&nbsp;makes 6&nbsp; ramekins (or eight 2\u201d ramekins)&nbsp;<\/span><\/p>\n<p><span style=\"color: #ff0000;\"><span style=\"text-decoration: underline;\">what you need<\/span>:<\/span><\/p>\n<p><span style=\"color: #999999;\">3 sheets <span class=\"famos-shop click famos-annotation refid-11T01 hkw-sheets\" title=\"famos gelatin\">gelatin<\/span><\/span><br \/>\n<span style=\"color: #999999;\"> 4 ounces <span class=\"famos-shop click famos-annotation refid-11T02\" title=\"famos ch\u00e8vre frais\">ch\u00e8vre frais<\/span>, room temperature<\/span><br \/>\n<span style=\"color: #999999;\"> \u00bc cup grapefruit juice<\/span><br \/>\n<span style=\"color: #999999;\"> 2 tablespoons <span class=\"famos-shop click famos-annotation refid-11T0B\" title=\"famos quality honey\">quality honey<\/span><\/span><br \/>\n<span style=\"color: #999999;\"> 1 cup low fat milk<\/span><br \/>\n<span style=\"color: #999999;\"> \u00bd vanilla bean, split and seeds removed<\/span><br \/>\n<span style=\"color: #999999;\"> 1 cup heavy cream<\/span><br \/>\n<span style=\"color: #999999;\"> \u00bd cup granulated sugar<\/span><br \/>\n<span style=\"color: #999999;\"> 2 pink grapefruits, cut into supremes<\/span><\/p>\n<p><span style=\"text-decoration: underline; color: #ff0000;\">how to:<\/span><\/p>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Bloom Gelatin<\/span>. Place gelatin sheets in a bowl of cold water. Let sit until gelatin softens. Drain. Squeeze gelatin to remove excess water. Set aside.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Reduce<\/span>. Place grapefruit juice in a saucepan and over medium-high heat, reduce by half. Set aside to cool.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Flavor Cheese<\/span>. In a separate bowl, whisk the ch\u00e8vre, milk, honey, and reduced juice together until creamy smooth. Set aside<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Scald Cream.<\/span> Place sugar, cream, and vanilla pods and the seeds in a saucepan over a medium-high flame. Bring to a boil, whisking occasionally. Once you reach a boil, remove the pan from the stove.&nbsp;<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Dissolve Gelatin<\/span>. Add gelatin to the scalded cream. Whisk until dissolved.&nbsp;<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Temper<\/span>. Slowly pour the cream into the cheese mixture, whisking constantly.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Chill.<\/span> Divide the mixture evenly amongst the ramekins and place in the refrigerator to set for at least 4 hours.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #999999;\"><span style=\"color: #ff0000;\">Serve.<\/span> Run a knife along the side of the ramekin interiors to un-mold the panna cotta. Invert the panna cotta and place in the center of a plate or bowl.
