tart, borderline bitter.\u00a0 Although they need something sweet to eliminate the bitterness, no one needs to eat cranberries diluted with water and simmered in cups of granulated processed sugar.<\/span><\/p>\n<p><span style=\"color: #999999;\">This compote recipe keeps the cranberry flavor while eliminating the bitterness.\u00a0 The cranberries are first saut\u00e9ed with a dash of Cassis and then simmered in pomegranate juice (very good for you) and agave syrup (a natural syrup from the agave cactus with a mild taste and is not processed).\u00a0 This compote is true to the character of cranberries and better for you.<\/span><\/p>\n<p><span style=\"color: #999999;\">The compote takes about 20 minutes to make and it can be done ahead of time.\u00a0 You can serve the compote alone but I would add some toasted nuts such as walnuts or pecans (the fat in the nuts will balance the tart berries). \u00a0 My favorite way to serve the compote is spooned over wedges of Kabocha squash.\u00a0 Of course it goes well with traditional dressing and potatoes.\u00a0 You can even try the compote over a rich cheesecake or walnut tart. \u00a0 Simple.\u00a0 Versatile.\u00a0 style=\"text-decoration: underline;\">what you need<\/span><\/span>:<\/p>\n<p>2 cups fresh cranberries<br \/>\nkosher salt (as needed)<br \/>\n2 tablespoons Cassis (or sweet Marsala or Sherry)<br \/>\n2 cups pomegranate juice<br \/>\n3\/4 cup light agave syrup<\/p>\n<p><span style=\"color: #ff0000;\"><span style=\"text-decoration: underline;\">how to<\/span><\/span>:<\/p>\n<ul>\n<li><span style=\"color: #ff0000;\">Saut\u00e9 Cranberries<\/span>.\u00a0 Place a large saut\u00e9 pan over medium-high heat.\u00a0 Once warm, add cranberries to the pan.\u00a0 Saut\u00e9 cranberries until they begin to burst.<\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #ff0000;\">Deglaze<\/span>.\u00a0 Once the cranberries begin to stick to the bottom of the pan, add Cassis. \u00a0 Reduce au sec (cook until the Cassis has been absorbed by the cranberries).<\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #ff0000;\">Add Liquid<\/span>.\u00a0 Add the pomegranate juice and the agave nectar to the cranberries.<\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #ff0000;\">Simmer.<\/span> Reduce flame and simmer the cranberries until the liquid has reached a syrup consistency.<\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #ff0000;\">Serve.<\/span> Serve warm.\u00a0 The compote can be stored in an airtight container overnight and reheated.<\/li>\n<\/ul>\n<p><img
