He works in the culinary television industry and like most Parisians, he is passionate about food and so our conversation revolved around food, of course. As he poured the tea, he shared with me a saying his grandmother had when she served tea. She would say, \u201c<span style=\"color: #ff0000;\"><em>une sucr\u00e9 ou pas du tout<\/em><\/span>\u201d (meaning, take one sugar or take nothing at all). Thinking of childrens\u2019 fondness for sugar (and for snacking), his grandmother\u2019s comment stuck with me and it inspired this week\u2019s <span style=\"color: #ff0000;\"><em>simple pleasure<\/em>: <em>g\u00e2teau au yaourt.<!--more--><\/em><\/span><\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #999999;\"><a href=\"http:\/\/www.chefmorgan.com\/gateau-au-yaourt-yogurt-cake-2\/halfsidecake-3\" rel=\"attachment wp-att-7244\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-7244\" title=\"g\u00e2teau au yaourt (yogurt cake)\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/04\/halfsidecake2-225x300.jpg\" alt=\"A sweet cake for kids without too much sugar\" width=\"225\" height=\"300\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/04\/halfsidecake2-225x300.jpg 225w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/04\/halfsidecake2-375x500.jpg 375w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><\/span><\/p>\n<p><span style=\"color: #999999;\">Children have a fondness for sweet things and for snacking. As a chef and a mother, I know that &nbsp;it is often a struggle to regulate childrens&#8217; sugar intake. In the States, desserts (as well as pre-packed snacks) contain a lot of&nbsp; added sugar or corn syrup and are quite sweet as a result. The problem is that this level of sweetness becomes the standard.<\/span><\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/www.chefmorgan.com\/gateau-au-yaourt-yogurt-cake-2\/cakeslice2\" rel=\"attachment wp-att-7225\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-7225\" title=\"g\u00e2teau au yaourt (yogurt cake)\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/04\/cakeslice2-225x300.jpg\" alt=\"A sweet cake for kids without too much sugar\" width=\"225\" height=\"300\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/04\/cakeslice2-225x300.jpg 225w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/04\/cakeslice2-375x500.jpg 375w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><\/p>\n<p><span style=\"color: #999999;\">French children are no different in their desire for sweet treats or for snacks. However, the desserts in France are far less sweet than what you find here. Things we consider breakfast items, such as <span class=\"famos-shop click famos-annotation refid-11O5B\" title=\"famos cr\u00eapes\">cr\u00eapes<\/span>, <span class=\"famos-shop click famos-annotation refid-11VBN\" title=\"famos waffles\">waffles<\/span>, or french toast, are considered dessert items in France. The comment of my friend\u2019s grandmother &#8211; who took care to make sure that my friend\u2019s taste for sugar was satisfied with little sugar &#8211; reminded me of this difference.<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #999999;\"><a href=\"http:\/\/www.chefmorgan.com\/gateau-au-yaourt-yogurt-cake-2\/cake-and-cream\" rel=\"attachment wp-att-7216\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-7216\" title=\"g\u00e2teau au yaourt (yogurt cake)\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/04\/cake-and-cream-350x262.jpg\" alt=\"A sweet cake for kids without too much sugar\" width=\"280\" height=\"210\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/04\/cake-and-cream-350x262.jpg 350w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/04\/cake-and-cream-580x435.jpg 580w\" sizes=\"auto, (max-width: 280px) 100vw, 280px\" \/><\/a><\/span><\/p>\n<p><span style=\"color: #999999;\">In France, the after-school snack is known as a \u201c<span style=\"color: #ff0000;\"><em>go\u00fbter<\/em><\/span>\u201d (it comes from the word \u201c<span style=\"color: #ff0000;\"><em><span class=\"famos-shop click famos-annotation refid-11O5D\" title=\"famos go\u00fbter\">go\u00fbter<\/span><\/em>\u201d<\/span> meaning \u201cto taste\u201d). It occurs about 4 p.m. and if you happen to visit a <span style=\"color: #ff0000;\"><em><span class=\"famos-shop click famos-annotation refid-11O5E\" title=\"famos boulangerie\">boulangerie<\/span><\/em><\/span> or <em><span class=\"famos-shop click famos-annotation refid-11O5G\" title=\"famos p\u00e2tisserie\">p\u00e2tisserie<\/span><\/em> at that time of day during the school year, you will see children eating a small croissant, a small piece of cake or a tartine with confiture while their mothers enjoy an espresso or afternoon tea. The <em><span style=\"color: #ff0000;\">go\u00fbter<\/span><\/em> is never that sweet although it can be a small <em><\/em><span class=\"famos-shop click famos-annotation refid-11O5H hkw-chocolate hkw-croissant hkw-\" title=\"famos pain au chocolat\">pain au chocolat <\/span>(chocolate croissant),<a title=\"la cuill\u00e8re fant\u00f4me en chocolat ou chocolat chaud du fant\u00f4me (ghostly chocolate spoon a\/k\/a ghostly hot chocolate)\" href=\"http:\/\/www.chefmorgan.com\/la-cuillere-fantome-en-chocolat-ou-chocolat-chaud-du-fantome-ghostly-chocolate-spoon-aka-ghostly-hot-chocolate\"><span style=\"color: #ff0000;\"><em> chocolat chaud<\/em><\/span><\/a> (hot chocolate) or a madeleine. If the<span style=\"color: #ff0000;\"><em> go\u00fbter<\/em><\/span> is enjoyed at home, <span style=\"color: #ff0000;\"><em>g\u00e2teau au yaourt <\/em><\/span>is a popular snack<span style=\"color: #ff0000;\">&nbsp;<\/span>(often it is made from one of those family recipes handed down from grandma). It is a <span class=\"famos-shop click famos-annotation refid-11O5L\" title=\"famos genoise\">genoise <\/span>cake much like angel food cake (although it is not like the sugary, spongy angel food cake you find in the grocery stores here so do not use that as a basis for comparison). <span style=\"color: #ff0000;\"><em>G\u00e2teau au yaourt <\/em><\/span>is light and moderately sweet. It has no butter. Traditionally, it is enjoyed by itself. Sometimes the batter is flavored with a little lemon zest or vanilla extract. &nbsp;<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #999999;\"><a href=\"http:\/\/www.chefmorgan.com\/gateau-au-yaourt-yogurt-cake-2\/cakesliceflowers\" rel=\"attachment wp-att-7217\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-7217\" title=\"g\u00e2teau au yaourt (yogurt cake)\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/04\/cakesliceflowers-350x262.jpg\" alt=\"A sweet cake for kids without too much sugar\" width=\"350\" height=\"262\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/04\/cakesliceflowers-350x262.jpg 350w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/04\/cakesliceflowers-580x435.jpg 580w\" sizes=\"auto, (max-width: 350px) 100vw, 350px\" \/><\/a><\/span><\/p>\n<p><span style=\"color: #999999;\">This week\u2019s<span style=\"color: #ff0000;\"><em> simple pleasure<\/em><\/span> is &#8220;just right.&#8221; &nbsp;A little something sweet makes the kids happy. &nbsp;Half the sugar (of typical cakes), nonfat yogurt and no butter (as well as an<\/span><span style=\"color: #999999;\">&nbsp;easy recipe) makes the parents happy too.&nbsp;<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #999999;\"><a href=\"http:\/\/www.chefmorgan.com\/gateau-au-yaourt-yogurt-cake-2\/splitstarawberries-2\" rel=\"attachment wp-att-7218\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-7218\" title=\"Strawberries\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/04\/splitstarawberries1-350x261.jpg\" alt=\"Strawberries\" width=\"280\" height=\"209\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/04\/splitstarawberries1-350x261.jpg 350w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/04\/splitstarawberries1-580x433.jpg 580w\" sizes=\"auto, (max-width: 280px) 100vw, 280px\" \/><\/a><\/span><\/p>\n<p><span style=\"color: #999999;\">I add orange zest and orange blossom water to the cake batter to brighten it for spring. &nbsp;To take advantage of the season, I top it with fresh strawberries and with whipped yogurt cream flavored with a touch of <em><span class=\"famos-shop click famos-annotation refid-11O5O\" title=\"famos Grand Marnier\">Grand Marnier<\/span> <\/em>(but you can use orange juice). For a decorative garnishment, I topped the cake with&nbsp;pea tendril flowers and sweet peas. However,&nbsp;note that <span style=\"color: #ff0000;\"><em>sweet pea flowers are inedible and &nbsp;any pea flowers photographed and called for in the recipe are purposes of &nbsp;garnishment only<\/em><\/span> (see below for further explaination). &nbsp;<span style=\"color: #ff0000;\"><em>Do not eat them!&nbsp;<\/em><\/span><\/span><\/p>\n<p><span style=\"color: #999999;\">When strawberries are not in season, you can serve this cake with a side of strawberry jam if you so choose. First, you need to make sure that the flower you want to use is <em>edible <\/em>(i.e., violets and roses are edible) and, if so, what part can you eat (i.e., the just the petals or the whole thing). Second, unless you grow the flowers yourself, make sure that the flower is what it is represented to be and that it is organic.<\/span><\/p>\n<p><span style=\"color: #999999;\">With respect to flowers from pea plants. The issue can lead to much confusion so let me summarize it this way: Sweet peas are typically lavender, pink and white flowers that come from a pea plant that produces only flowers. These fragrant flowers, <span style=\"color: #ff0000;\">\u201csweet peas\u201d, are<em> inedible<\/em> and are known to be <em>poisonous.&nbsp;<\/em> Do not eat them.<\/span><\/span><\/p>\n<p><span style=\"color: #999999;\">Other pea plants that produce peas (snap peas, snow peas and English \/garden peas) also produce white flowers (often sold with the pea tendrils) and are generally considered edible. However,<em> be aware that even produce sellers mix the the two up and misname them<\/em>.
