When I am in Los Angeles, I grill as much as I can simply because nothing beats cooking in the beautiful outdoor weather (in Paris my kitchen is so small that the mere pulling of something from the oven will surely place my backside on the opposite wall&#8230;although there is a nice window). I am soon headed back to France so this week I was grilling and it was the flames from the grill, the lobster tails on the grill, and an unlit <span class=\"famos-shop click famos-annotation refid-11RJ7\" title=\"famos cigar\">cigar<\/span> which inspired this week\u2019s <span style=\"color: #ff0000;\"><em>simple pleasure: lotte cigare <\/em>(monkfish cigar)<\/span>.&nbsp;<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #888888;\"><br \/>\n<!--more--><a href=\"http:\/\/www.chefmorgan.com\/two-ingredients-and-five-minutes-lotte-cigare-monkfish-cigar\/grilling2\" rel=\"attachment wp-att-7685\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-7685\" title=\"www.chefmorgan.com\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/05\/grilling2-350x191.jpg\" alt=\"monkfish rolled in prosciutto \" width=\"350\" height=\"191\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/05\/grilling2-350x191.jpg 350w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/05\/grilling2-580x316.jpg 580w\" sizes=\"auto, (max-width: 350px) 100vw, 350px\" \/><\/a><\/span><\/p>\n<p><span style=\"color: #888888;\">It was a beautiful early evening and I was grilling <span class=\"famos-shop click famos-annotation refid-11RJ8\" title=\"famos lobster tails\">lobster tails<\/span>. An unlit cigar was nearby and for a quick moment, I thought about lighting it with the grill flames. However, given my recent episode of unforeseen accidents (i.e., <a title=\"rice and coconut milk smoothies\" href=\"http:\/\/www.chefmorgan.com\/rice-and-coconut-milk-smoothies-2\">breaking my wrist while merely running<\/a>), I envisioned my hair and eyebrows catching fire and the cigar still unlit so I resorted to more typical means. I looked at the lobsters on the grill and I thought of <span class=\"famos-shop click famos-annotation refid-11RJH\" title=\"famos Monkfish\">Monkfish<\/span>, a type of anglerfish from the northwest Atlantic which is often referred to as the \u201cpoor man\u2019s lobster.\u201d They are enjoyed in France often (although the first time I tried it was in the States, not in France).&nbsp; Monkfish fillets are also round (although the fish itself looks like a slimy club). Enjoying the now lit cigar, the thought occurred to me that if I rolled a monkfish fillet in prosciutto and grilled it, it would not only be a rolled \u201ccigar\u201d but grilled, this \u201cpoor man\u2019s lobster\u201d would really resemble a lobster tail. The thought is not so inventive, really, because in France, anything they roll up, including jam inside phyllo dough, becomes a culinary \u201c<span style=\"color: #ff0000;\"><em>cigare.\u201d&nbsp;<\/em><\/span><\/span><\/p>\n<p><span style=\"color: #888888;\">Even if the logic of this creation seems tortured to you, the recipe is not. It is a delicious meal and this is all you need:<\/span>&nbsp;<\/p>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\"><strong>2 ingredients<\/strong>:<\/span> quality <span class=\"famos-shop click famos-annotation refid-11RJI\" title=\"famos Monkfish fillets\">Monkfish fillets<\/span> and prosciutto (preferably <span class=\"famos-shop click famos-annotation refid-11RJJ\" title=\"famos Prosciutto di Parma\">Prosciutto di Parma<\/span>);&nbsp;<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\"><strong>Salt, pepper and a little olive oil<\/strong><\/span>; and<\/span>&nbsp;<\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\"><strong>A heat source <\/strong><\/span>(a grill or even a pan over a stove). &nbsp;<\/span><\/li>\n<\/ul>\n<p><span style=\"color: #888888;\">The fillet cooks in<span style=\"color: #ff0000;\"><strong> 5 minutes. &nbsp;<\/strong><\/span><\/span><span style=\"color: #888888;\"><strong><em>2 ingredients and 5 minutes <\/em><\/strong>and you have a delicious dinner (and time to light and enjoy your cigar). <a title=\"lotte cigare (Monkfish cigars)\" href=\"http:\/\/www.chefmorgan.com\/lotte-cigare-monkfish-cigars\">Recipe.<\/a><\/span><\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/www.chefmorgan.com\/two-ingredients-and-five-minutes-lotte-cigare-monkfish-cigar\/joue-de-lotte\" rel=\"attachment wp-att-7686\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-7686\" title=\"www.chefmorgan.com\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/05\/joue-de-lotte-350x233.jpg\" alt=\"monkfish at a market in france\" width=\"350\" height=\"233\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/05\/joue-de-lotte-350x233.jpg 350w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/05\/joue-de-lotte-580x386.jpg 580w\" sizes=\"auto, (max-width: 350px) 100vw, 350px\" \/><\/a><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #333333;\"><strong>quick ingredient and production notes<\/strong><\/span><\/p>\n<p><span style=\"color: #888888;\">Monkfish (<span style=\"color: #ff0000;\"><em>lotte <\/em><\/span>in French) has also been called the devil or the toad of the sea, because, in truth, physical beauty has eluded it although taste has not. It is referred to as an inexpensive lobster because the flesh of Monkfish is meaty, buttery, without bones, and rich like that of lobster but the cost is less (although the gap is less than what it used to be). I do not find it as flavorful as lobster but Monkfish is a substantial fish that needs little embellishment to add moisture or bring out its flavor.<\/span><\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/www.chefmorgan.com\/two-ingredients-and-five-minutes-lotte-cigare-monkfish-cigar\/opague\" rel=\"attachment wp-att-7687\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-7687\" title=\"www.chefmorgan.com\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/05\/opague-350x262.jpg\" alt=\"monkfish rolled in prosciutto \" width=\"280\" height=\"210\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/05\/opague-350x262.jpg 350w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/05\/opague-580x435.jpg 580w\" sizes=\"auto, (max-width: 280px) 100vw, 280px\" \/><\/a><\/p>\n<p><span style=\"color: #888888;\">Monkfish is prepared by roasting the fillets whole or cutting the fillets into medallions and saut\u00e9ing them or skewering them and then grilling or pan-frying them. Because it is a substantial fish it is more forgiving than a delicate, lean fish and less likely to be over-cooked and dry. As such, it is a good fish for those who question their ability to cook fish.<\/span><\/p>\n<p><span style=\"color: #888888;\">If you do not have prosciutto, you can use bacon. However, bacon is not as easy to work with because the slices are long and thick, you will have to trim them. The combination of monkfish and carrots was not an accident. First, everyone has carrots in their refrigerator (as well as the other ingredients called for in the pur\u00e9e recipe). Second, you not only have the ingredients on hand, but it is easy to make: boil and mash. Third, you can make it ahead of time and warm it at time of service. Fourth, carrots are one of those vegetables that most people, young and not so young, like. Fifth, a big chef\u2019s secret is that carrots pair extremely well with seafood.&nbsp; Now the secret is out<\/span><\/p>\n<p><span style=\"color: #888888;\">Serve the fillets and pur\u00e9e with a green salad, <span class=\"famos-shop click famos-annotation refid-11RJK\" title=\"famos mesclun\">mesclun<\/span> or some spicy greens (<span class=\"famos-shop click famos-annotation refid-11RJL\" title=\"famos arugula\">arugula<\/span> or <span class=\"famos-shop click famos-annotation refid-11RJM\" title=\"famos mizuna\">mizuna<\/span>) would be perfect. &nbsp;Five minutes for a great dinner&#8230;what will you do with all of that time ?
