Cover pot with a lid and place over a medium-high flame. Cook until carrots are very soft.<\/span>&nbsp;<\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Pur\u00e9e.<\/span> Place cooked carrots and water in a <span class=\"famos-shop click famos-annotation refid-11U08\" title=\"famos food processor\">food processor<\/span> (or you can use an immersion blender and a tall cylinder), with the salt, cumin, piment, lemon juice, pepper, and 3 ounces of the <span class=\"famos-shop click famos-annotation refid-11M2K\" title=\"famos olive oil\">olive oil<\/span>. Pur\u00e9e until very smooth.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Adjust Consistency.<\/span> If the flavor profile is good, but the pur\u00e9e is too thick, add more water. If pur\u00e9e too thick, and it needs a little more flavor, add a little more <span class=\"famos-shop click famos-annotation refid-11M2K\" title=\"famos olive oil\">olive oil<\/span> and\/or lemon juice.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Adjust Seasoning.<\/span> Season to taste with salt and pepper.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\">Serve.<\/span> Serve a large dollop of warm pur\u00e9e with the Monkfish. You can prepare the pur\u00e9e ahead of time and store in an air-tight container in the refrigerator for 2-3 days.
