En route to the <span class=\"famos-shop click famos-annotation refid-11PBZ\" title=\"famos D-Day sites\">D-Day sites<\/span>, the flags of the Allied forces are flown along the roads and posted everywhere from public buildings to the windows of the small country farmhouses, particularly in the month of June. My father is also a war veteran. I read and re-read <em><span class=\"famos-shop click famos-annotation refid-11PC3\" title=\"famos Stephen Ambrose's&nbsp;book D-Day\">Stephen Ambrose&#8217;s&nbsp;book D-Day<\/span><\/em> and <em><span class=\"famos-shop click famos-annotation refid-11PC4\" title=\"famos Cornelius Ryan\u2019s The Longest Day\">Cornelius Ryan\u2019s The Longest Day<\/span><\/em>. I have seen <em><span class=\"famos-shop click famos-annotation refid-11PC5\" title=\"famos Saving Private Ryan\">Saving Private Ryan<\/span> <\/em>and <em><span class=\"famos-shop click famos-annotation refid-11PC6\" title=\"famos Band of Brothers\">Band of Brothers<\/span><\/em> more times than I can count but I have always wanted the touch the ground we landed on 68 years ago.&nbsp;<\/span><span style=\"color: #888888;\">One summer after teaching classes in Normandy, I finally did.&nbsp;<\/span><span style=\"color: #888888;\">The inspiration for this week\u2019s <span style=\"color: #ff0000;\"><em>simple pleasure,<\/em> <em>soupe de p\u00eaches au gingembre frais <\/em><\/span>(peach \u201csoup\u201d with fresh ginger), was my journey to <span class=\"famos-shop click famos-annotation refid-11PC7\" title=\"famos Omaha Beach\">Omaha Beach<\/span>. The mission was called \u201cOverload.\u201d&nbsp;<\/span><\/p>\n<p><span style=\"color: #888888;\">To create confusion, there would be a bombardment, 45 minutes prior to the landings, of Germany\u2019s \u201cAtlantic Wall\u201d (non-connecting fortifications built by the Todt organization for the Germans). The air landings had to be done in a full moon (so the paras could see) and the landings by sea needed to occur midway through a rising tide (due to the water depth and the spikes planted underwater). To ensure an element of surprise, the bombardment had to occur in the very first light of dawn. To meet the conditions of moon, daybreak, timing, and tide, the attack had to occur between June 5-7 1944. Overload was ultimately implemented on June 6, 1944.&nbsp;<\/span><\/p>\n<p><span style=\"color: #888888;\">There were two airborne attacks (by three divisions) via glider and parachutes: (1) the American attack (to protect the Utah Beach landing<em>)<\/em>; and (2) the British attack (to protect against a Germain counter-attack between the<span style=\"color: #ff0000;\"><em> Caen Plain<\/em><\/span> and the <em><span style=\"color: #ff0000;\">Dives Marshes<\/span>)<\/em>.&nbsp;<\/span><\/p>\n<p><span style=\"color: #888888;\">Beginning at 6:30 a.m.,135,000 men (and about 20,000 trucks) landed on five beaches in Normandy. The beaches were designated: \u201cUtah\u201d &nbsp;<em>(<span style=\"color: #ff0000;\">Sainte-Marie-du-Mont<\/span>); \u201cOmaha\u201d (<span style=\"color: #ff0000;\">Colleville-sur-Mer, Saint-Laurent-sur-Mer<\/span><\/em> and <em><span style=\"color: #ff0000;\">Vierville<\/span>); \u201c<\/em>Gold<em>\u201d (<span style=\"color: #ff0000;\">Ver-sur-Mer<\/span>); &nbsp;&#8220;<\/em>Juno&#8221;<em> (<span style=\"color: #ff0000;\">Courseulles-sur-Mer<\/span>);<\/em> and \u201cSword\u201d<em> (<span style=\"color: #ff0000;\">Saint-Aubin-sur<\/span><span style=\"color: #ff0000;\">-Mer<\/span> to <span style=\"color: #ff0000;\">Ouistreham)<\/span>. <\/em>The American troops landed on Utah and Omaha, the British landed on Gold and Sword, and the Canadians landed on<em> <\/em>Juno. The greatest losses were suffered at Omaha Beach. From the beaches, the intended targets were the cities of <span style=\"color: #ff0000;\"><em>Caen, Bayeaux, Isigny,<\/em><\/span> and <span style=\"color: #ff0000;\"><em>Carentan.&nbsp;<\/em><\/span><\/span><\/p>\n<p><span style=\"color: #888888;\">The battle of Normandy lasted 3 months.<\/span><\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/www.chefmorgan.com\/venez-avec-moi-en-normandie-omaha-beach\/crosses\" rel=\"attachment wp-att-8006\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-8006\" title=\"www.chefmorgan.com\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/06\/crosses-350x233.jpg\" alt=\"Normandie: Omaha Beach grave site\" width=\"350\" height=\"233\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/06\/crosses-350x233.jpg 350w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/06\/crosses-580x386.jpg 580w\" sizes=\"auto, (max-width: 350px) 100vw, 350px\" \/><\/a><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #333333;\">&nbsp;<strong>overview of the D-Day sites&nbsp;<\/strong><\/span><\/p>\n<p><span style=\"color: #888888;\">There are 29 D-Day sites which include Atlantic Wall sites, landing and battle sites, museums, and cemeteries. For purposes of planning a trip, know that the majority of these sites line the north coast of <span style=\"color: #ff0000;\"><em><span class=\"famos-shop click famos-annotation refid-11PCD\" title=\"famos Basse-Normandy\">Basse-Normandy<\/span><\/em><\/span> in between <span style=\"color: #ff0000;\"><em><span class=\"famos-shop click famos-annotation refid-11PCE\" title=\"famos Cherbourg\">Cherbourg<\/span><\/em><\/span> (at the most northern \/western point) to <span style=\"color: #ff0000;\"><em><span class=\"famos-shop click famos-annotation refid-11PCF\" title=\"famos Mont Canisy\">Mont Canisy<\/span><\/em><\/span> furthest east (just west of <span style=\"color: #ff0000;\"><em>Honfleur<\/em><\/span> and <em><span style=\"color: #ff0000;\">Pont l\u2019Ev\u00e9que<\/span>)<\/em>. There are five D-Day sites which lay south of this west-east route and include:<\/span><\/p>\n<ul>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\"><em>Mus\u00e9e &lt;&lt;June 44&gt;&gt;<\/em><\/span>;<\/span><\/li>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\"><em>M\u00e9morial de Montormel<\/em><\/span>;<\/span><\/li>\n<li><span style=\"color: #888888;\"><em><span style=\"color: #ff0000;\">Mus\u00e9e de la Perc\u00e9e du Bocage<\/span>;&nbsp;<\/em><\/span><\/li>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\"><em>M\u00e9morial de Caen<\/em><\/span>; and&nbsp;<\/span><\/li>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\"><em>Mus\u00e9e de la Bataille de Tilly-sur-Seulles<\/em><\/span>.&nbsp;<\/span><\/li>\n<\/ul>\n<p><span style=\"color: #888888;\">There are 8 chronological driving routes,&nbsp; marked \u201c<span style=\"color: #ff0000;\"><em><span class=\"famos-shop click famos-annotation refid-11PCG\" title=\"famos Normandie Terre Liberte\">Normandie Terre Liberte<\/span><\/em><\/span>\u201d, which take you from the beach assault on June 6 to taking of the port in<\/span><span style=\"color: #ff0000;\"><em> Cherbourg<\/em><\/span><span style=\"color: #888888;\"> then southerly to <span style=\"color: #ff0000;\"><em>Alen\u00e7on<\/em><\/span> and then up to <span style=\"color: #ff0000;\"><em>L\u2019Aigle <\/em><\/span>and <em><span style=\"color: #ff0000;\">Caen<\/span>.<\/em>&nbsp;<\/span><\/p>\n<p><span style=\"color: #888888;\">In the event there is a D-day subject or site you are particularly interested in, they are broken down as follows:<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"text-decoration: underline;\"><span style=\"color: #888888;\"><strong><span class=\"famos-shop click famos-annotation refid-11PCH\" title=\"famos The Atlantic Wall\">The Atlantic Wall&nbsp;<\/span><\/strong><\/span><\/span><\/p>\n<p><span style=\"color: #888888;\">These are batteries, fortifications, and locations where important battles took place, including<span style=\"color: #ff0000;\"> <em>La Point du Hoc<\/em><\/span> where the American 2nd Battalion of Rangers scaled the summit in a few minutes to capture this important German fortification. The Atlantic Wall sites include:<\/span><\/p>\n<ul>\n<li><span style=\"color: #888888;\"><em><span style=\"color: #ff0000;\">Batterie d\u2019Azeville<\/span> (<\/em>in <span style=\"color: #ff0000;\"><em>Azeville)<\/em><\/span>;<\/span><\/li>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\"><em>Batteries du Mont Canisy <\/em><\/span>(in<span style=\"color: #ff0000;\"><em> B\u00e9neville-sur-Mer<\/em><\/span>);<\/span><\/li>\n<li><span style=\"color: #888888;\"><em><span style=\"color: #ff0000;\">Site Hillman<\/span> (<\/em>in<span style=\"color: #ff0000;\"><em> Colleville-Montgomery<\/em><\/span>);<\/span><\/li>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\"><em>La Pointe du Hoc <\/em><\/span>(in <span style=\"color: #ff0000;\"><em>Cricqueville-en-Bessin<\/em><\/span>);<\/span><\/li>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\"><em>Mus\u00e9e Radar de Duvres<\/em><\/span> (in<span style=\"color: #ff0000;\"><em> Douvres-la-D\u00e9livrand<\/em>e<\/span>);<\/span><\/li>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\"><em>Batterie de Maisy <\/em><\/span>(in <span style=\"color: #ff0000;\"><em>Grandcamp-Maisy<\/em><\/span>);<\/span><\/li>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\"><em>Batterie de Longues-sur-Mer <\/em><\/span>(in<span style=\"color: #ff0000;\"><em> Longues-sur-Mer<\/em><\/span>);<\/span><\/li>\n<li><span style=\"color: #888888;\"><em><span style=\"color: #ff0000;\">Mus\u00e9e de la batterie de Merville<\/span> (<\/em>in<span style=\"color: #ff0000;\"><em> Merville-Franceville<\/em><\/span>);<\/span><\/li>\n<li><span style=\"color: #888888;\"><em><span style=\"color: #ff0000;\">Mus\u00e9e du Mur de L\u2019Atlantique<\/span> (<\/em>in <em>Ouistreham<\/em>); and<\/span><\/li>\n<li><span style=\"color: #888888;\"><span style=\"color: #ff0000;\"><em>Mus\u00e9e de la Batterie de Crisbecq <\/em><\/span>(in<em><span style=\"color: #ff0000;\"> Saint-Marcouf-de-I\u2019Isle<\/span>).<\/em><\/span><\/li>\n<\/ul>\n<p style=\"text-align: center;\"><span style=\"text-decoration: underline;\">&nbsp;<span style=\"color: #888888; text-decoration: underline;\"><strong>The Airbourne Attacks<\/strong><\/span><\/span><\/p>\n<p><span style=\"color: #888888;\">There is a D-Day site devoted to each attack. The <em><span style=\"color: #ff0000;\">M\u00e9morial Pegasus<\/span><\/em>, in <em><span style=\"color: #ff0000;\">Ranville,<\/span><\/em> memorializes the British air attack, and the <span style=\"color: #ff0000;\"><em>Centre Historique des Parachutistes US du Jour-J<\/em><\/span> in <span style=\"color: #ff0000;\"><em>Saint-C\u00f4me-du-Mont<\/em><\/span> for the American air attack.<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"text-decoration: underline;\"><span style=\"color: #888888;\"><strong>Cemeteries<\/strong><\/span><\/span><\/p>\n<p><span style=\"color: #888888;\">There are 16 British cemeteries, 2 Canadian cemeteries, 2 American cemeteries, 1 Polish cemetery, 1 French cemetery, and 4 German cemeteries. <span style=\"color: #ff0000;\"><em><span class=\"famos-shop click famos-annotation refid-11PCI\" title=\"famos The American Cemetery in Colleville-sur-Mer\">The American Cemetery in Colleville-sur-Mer<\/span><\/em><\/span> is the largest.<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"text-decoration: underline;\"><span style=\"color: #888888;\"><strong>Museums<\/strong><\/span><\/span><\/p>\n<p><span style=\"color: #888888;\">3 museums cover the overall events of the Normandy Battle: the<span style=\"color: #ff0000;\"><em> <span class=\"famos-shop click famos-annotation refid-11PCJ\" title=\"famos Mus\u00e9e M\u00e9morial de la Bataille de Normandie\">Mus\u00e9e M\u00e9morial de la Bataille de Normandie<\/span><\/em><\/span> in<span style=\"color: #ff0000;\"><em> Bayeux<\/em><\/span>; the <span class=\"famos-shop click famos-annotation refid-11PCK\" title=\"famos Mus\u00e9e \u201cJuin 44\u201d\"><span style=\"color: #ff0000;\">Mus\u00e9e \u201cJuin 44\u201d<\/span> <\/span>in <span style=\"color: #ff0000;\"><em>L\u2019Aigle<\/em><\/span> (has wax figures with voices to match portray 13 different critical moments in WWII); Before its liberation by the British and Canadian troops in July 1944, much of <span style=\"color: #ff0000;\"><em>Caen<\/em><\/span> was destroyed. It was rebuilt&nbsp; but the city was changed. <span style=\"color: #ff0000;\">Caen<\/span> seems to center around the<span style=\"color: #ff0000;\"> <em><span class=\"famos-shop click famos-annotation refid-11PCV\" title=\"famos Ch\u00e2teau de Caen\">Ch\u00e2teau de Caen<\/span><\/em><\/span>, built by William the Conqueror. The <span style=\"color: #ff0000;\"><em>Ch\u00e2teau<\/em><\/span> houses the <span style=\"color: #ff0000;\"><em>Mus\u00e9e des Beaux-Arts de Caen<\/em><\/span> and <span style=\"color: #ff0000;\"><em>Mus\u00e9e de Normandie<\/em><\/span>. Rondelle-sliced blood sausage with saut\u00e9ed apples and a hint of cinnamon on top of a light sable, chicken from the nearby Auge Valley in a light mushroom cream sauce and steamed potatoes.&nbsp; For dessert, peach and basil soup (It was the sixth time I had peach \u201csoup\u201d this summer and I enjoyed seeing everyone\u2019s different interpretation of a simple closure to a meal). It is not easy to write about how you feel while at this sacred and solemn place.&nbsp;<\/span><\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/www.chefmorgan.com\/venez-avec-moi-en-normandie-omaha-beach\/paths-to-beach\" rel=\"attachment wp-att-8015\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-8015\" title=\"www.chefmorgan.com\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/06\/paths-to-beach-350x233.jpg\" alt=\"The American Cemetery and Omaha Beach\" width=\"315\" height=\"210\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/06\/paths-to-beach-350x233.jpg 350w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/06\/paths-to-beach-580x386.jpg 580w\" sizes=\"auto, (max-width: 315px) 100vw, 315px\" \/><\/a><\/p>\n<p><span style=\"color: #888888;\">The American cemetery is on the bluffs and paths lead to the beach where the 1st and 29th Infantry landed. The open-exposed beach of 200 yards beach is far, far below the plateau. There is an overlook a little north of the memorial which gives a panoramic view of Omaha Beach. I stood here. Stupidly, I thought that if I had a belly-full of French food in <span style=\"color: #ff0000;\"><em>Caen<\/em><\/span>, I would be less affected by what I saw here. I was wrong. I should know of all people that a full stomach will not comfort an aching heart or a worried mind. Despite my lunch, I felt sad and a little angry at humanity for creating such loss.&nbsp;<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #888888;\"><a href=\"http:\/\/www.chefmorgan.com\/venez-avec-moi-en-normandie-omaha-beach\/standing-on-overlook-2\" rel=\"attachment wp-att-8035\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-8035\" title=\"www.chefmorgan.com\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/06\/standing-on-overlook1-200x300.jpg\" alt=\"the american Cemetery and Omaha Beach\" width=\"200\" height=\"300\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/06\/standing-on-overlook1-200x300.jpg 200w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/06\/standing-on-overlook1-333x500.jpg 333w\" sizes=\"auto, (max-width: 200px) 100vw, 200px\" \/><\/a><\/span><\/p>\n<p><span style=\"color: #888888;\">When I stared down at the beach I wondered how those men, already sick, tired, cold, under attack and scared, with swamped boats, ever got on these beaches and made it up these bluffs? I thought of the words of another American, Ernie Pyle, who was there, 68 years before.<\/span><\/p>\n<p><span style=\"color: #888888;\">On June 12, 1944, in one of his D-Day columns, Ernie Pyle described the landing on Omaha Beach and I recalled those phrases: \u201cone-hundred foot bluff,\u201d German troops hidden in trenches, \u201chidden machine gun nests,\u201d \u201cbarbed-wire entanglements with mines,\u201d&nbsp; mines attached to buried logs, \u201cmachine guns firing from the slopes,\u201d \u201cunderwater obstacles,\u201d \u201cfields of evil devices under the water,\u201d an \u201cinhuman wall of fire from the bluff.\u201d&nbsp;<\/span><span style=\"color: #888888;\">Pyle wrote that it was \u201c<em>a pure miracle that [the outnumbered Americans] ever took the beach at all\u201d<\/em> and they did \u201cit with every advantage on the enemy\u2019s side and every disadvantage on [theirs]\u201d but the Americans had the spirit that \u201cwins battles and eventually wars.\u201d<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #888888;\"><a href=\"http:\/\/www.chefmorgan.com\/venez-avec-moi-en-normandie-omaha-beach\/flag-at-ceme\" rel=\"attachment wp-att-8007\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-8007\" title=\"www.chefmorgan.com\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/06\/flag-at-ceme-200x300.jpg\" alt=\"The american Cemetery and Omaha Beach American Flag\" width=\"200\" height=\"300\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/06\/flag-at-ceme-200x300.jpg 200w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/06\/flag-at-ceme-333x500.jpg 333w\" sizes=\"auto, (max-width: 200px) 100vw, 200px\" \/><\/a><\/span><\/p>\n<p><span style=\"color: #888888;\">Pyle wrote the column for the purpose that others would know \u201cand appreciate and forever be humbly grateful to those both dead and alive who did it for [us].\u201d<strong>(<\/strong><em><span class=\"famos-shop click famos-annotation refid-11PCZ\" title=\"famos Ernie's War: The Best of Ernie Pyle's World War II Dispatches\">Ernie&#8217;s War: The Best of Ernie Pyle&#8217;s World War II Dispatches<\/span><\/em>, edited by David Nichols, pp. 277-80). &nbsp;Mission accomplished.<\/span><\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/www.chefmorgan.com\/venez-avec-moi-en-normandie-omaha-beach\/me-at-cemetary\" rel=\"attachment wp-att-8013\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-8013\" title=\"www.chefmorgan.com\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/06\/me-at-cemetary-350x233.jpg\" alt=\"The american Cemetery and Omaha Beach Chef Morgan\" width=\"315\" height=\"210\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/06\/me-at-cemetary-350x233.jpg 350w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/06\/me-at-cemetary-580x386.jpg 580w\" sizes=\"auto, (max-width: 315px) 100vw, 315px\" \/><\/a><\/p>\n<p><span style=\"color: #888888;\">While the cemetery was filled people, the majority were not American. I went to a private side garden to call my father to share the moment with him. No answer. I called again. No answer. It was like the ending to a French movie. I sat on that cement bench and thought about my uncles and the other men that fought on D-Day.&nbsp; <\/span><\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/www.chefmorgan.com\/venez-avec-moi-en-normandie-omaha-beach\/phone\" rel=\"attachment wp-att-8018\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-8018\" title=\"www.chefmorgan.com\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/06\/phone-350x203.jpg\" alt=\"cell phone on grass at the American Cemetery in Omaha Beach France\" width=\"315\" height=\"183\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/06\/phone-350x203.jpg 350w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/06\/phone-580x337.jpg 580w\" sizes=\"auto, (max-width: 315px) 100vw, 315px\" \/><\/a><\/p>\n<p><span style=\"color: #888888;\">While I have hopelessly be drawn to France all my adult life, I am, proudly, an American. So with a belly full of French food and a heart full of American pride, I headed back to <em>Rouen<\/em> in record time to get gas, park the car in the after-hours lot, walk to a random hotel to deposit the car keys, and catch a cab (because they was no way I could carry all the copper and Calvados for miles) to the train station. <\/span><\/p>\n<p><span style=\"color: #888888;\">I literally stepped on the train at 8:09 (departure time 8:10) with my copper jam spoon falling from a bag and glass Calvados bottles noisily announcing my arrival. Three French train employees laughed at the clumsy display and as they helped me, they said: \u201c<em>C\u2019est pas besoin de vous d\u00e9p\u00eacher. Nous ne partirons pas sans vous<\/em><em>.<\/em>\u201d&nbsp; (Don\u2019t hurry we would not leave without you). With my face flushed from the luggage struggle, I responded:&nbsp; \u201c<em>Merci. Alors, c\u2019est tr\u00e8s sympa mais tout le monde pourrait s\u2019inqui\u00e9ter qu\u2019il y ait une gr\u00e8ve des trains&nbsp; maintenant !<\/em> \u201d (that is nice of you but everyone would worry that it was the beginning of a train strike<em>). <\/em>They laughed because the reference was timely (there was a major airport strike only two weeks previously). As we stuffed my bags on the baggage containers, my French phone rang cock-a-doodle-doo-ing (my American phone quacks like a duck &#8230; the animal rings keep me in the relevant time-zone). Other passengers stared at me and as I reached for my phone, I explained: \u201c<em>Je suis un chef du cuisine<\/em>, \u201c (I am a chef) . They nodded as if the explanation for the rooster ring was logical and returned to their business and the train took me to my second home, in <em><span style=\"color: #ff0000;\">Paris.<\/span><\/em><\/span>&nbsp;<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/www.chefmorgan.com\/venez-avec-moi-en-normandie-omaha-beach\/exportsoupclose2-2\" rel=\"attachment wp-att-7994\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-7994\" title=\"www.chefmorgan.com\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/06\/exportsoupclose21-350x262.jpg\" alt=\"Peach Soup\" width=\"350\" height=\"262\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/06\/exportsoupclose21-350x262.jpg 350w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/06\/exportsoupclose21-580x435.jpg 580w\" sizes=\"auto, (max-width: 350px) 100vw, 350px\" \/><\/a><\/p>\n<p style=\"text-align: center;\">&nbsp;<span style=\"color: #888888;\"><strong>the war and food and making the most of a peach<\/strong><\/span><\/p>\n<p><span style=\"color: #888888;\">When I lunched in <em><span style=\"color: #ff0000;\">Caen<\/span><\/em>, I wondered if France\u2019s approach to food (of conservation, appreciation, and utility) was shaped by its history of revolution and wars?&nbsp; I thought of this because my grandfather\u2019s family was affected greatly in the Great Depression (as were many Americans) but it was this loss that shaped his approach to food. My grandfather had an appreciation for food, especially quality food, he made things last and there was no waste. I remember my grandmother canning, pur\u00e9eing, and stirring ketchup on the stovetop into all hours of the morning so not one tomato was wasted. My grandfather held-on dearly to that special brandy or port bringing it out to savor in small quantities at a time and only on special occasions. Food was rationed, unconsciously,&#8230;portions were what they needed to be.&nbsp;<\/span><\/p>\n<p><span style=\"color: #888888;\">Despite the tragedy of 9\/11 (and the rations we had here during the World Wars), the United States has not known war the way France has in the last 100 years where on more than one occasion their entire country was ravaged by war.&nbsp; The manner in which the baby boomers, my generation, and subsequent generations approach food stands in stark contrast to that of my grandfather&#8217;s and that of the French, and is, quite honestly, wasteful with an emphasis on quantity and abundance: it is getting as much as you can for as little as you can. I find the opposite is true in France. In France, you take what you need for hunger and no more. There is a genuine appreciation for food and especially for making the most of quality ingredients in a special, thoughtful way. Is it because they, like my grandfather, know what it is like to be without it?&nbsp;<\/span>&nbsp;<\/p>\n<p><span style=\"color: #888888;\">This week\u2019s recipe was inspired by the peach soup I had in <em><span style=\"color: #ff0000;\">Caen<\/span> (<\/em>although peach soup is popular throughout France). This \u201csoup\u201d is nothing but peaches prepared three ways: juiced, pur\u00e9ed, and sliced raw. There is no added sugar. It is embellished with only freshly grated ginger and freshly squeezed lemon juice.&nbsp;<\/span><\/p>\n<p><span style=\"color: #888888;\">Make sure to fully chill your peach mash before putting it into your ice cream\/sorbet maker. If you do not have one, you can make peach ice by placing the mash in the freezer, taking it out to break up the frozen mash with a fork and then return it to the freezer.
