Place diced peaches, sugar, and lemon juice in a saucepan over medium heat. Cook until the sugar has dissolved and the peaches are soft and loosing their shape (about 8 minutes).<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #c0c0c0;\"><span style=\"color: #ff0000;\">Pur\u00e9e.<\/span> Use an <a class=\"famos-link click famos-annotation refid-11K81\" style=\"border-bottom: 1px dotted #4F739E; cursor: pointer; text-decoration: none;\" title=\"famos immersion blender\" href=\"http:\/\/accounts.famos.com\/accounts\/services\/click\/default\/11K81\/?r=http%3A%2F%2Fwww.williams-sonoma.com%2Fsearch%2Fresults.html%3FactiveTab%3Dproducts%26words%3Dimmersion%2Bblender%26cm_sp%3DOnsiteSearch-_-GlobalNav-_-Button%26type-ahead-viewset%3Decom\" target=\"_blank\">immersion blender<\/a> to pur\u00e9e the peaches until smooth. Strain through sieve or strainer to make sure you have a smooth texture. This should yield 1 cup <em>coulis.<\/em><\/span>&nbsp;<\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #c0c0c0;\"><span style=\"color: #ff0000;\">Bloom And Dissolve Gelatin.<\/span> Bloom gelatin sheets by placing them in cool water. Once soft, remove them from the water and gently squeeze to expel excess water.&nbsp; Dissolve the gelatin sheets by adding them to the<em> warm coulis. <\/em>Use a whisk to incorporate. Set aside to cool slightly.<\/span>&nbsp;<\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #c0c0c0;\"><span style=\"color: #ff0000;\">Add Cream.&nbsp;<\/span> While <em>coulis <\/em>is cooling, place heavy cream in a bowl of a <a class=\"famos-link click famos-annotation refid-11K83\" style=\"border-bottom: 1px dotted #4F739E; cursor: pointer; text-decoration: none;\" title=\"famos stand alone mixer\" href=\"http:\/\/accounts.famos.com\/accounts\/services\/click\/default\/11K83\/?r=http%3A%2F%2Fwww.williams-sonoma.com%2Fsearch%2Fresults.html%3FactiveTab%3Dproducts%26words%3Dstand%2Bmixer%26cm_sp%3DOnsiteSearch-_-GlobalNav-_-Button%26type-ahead-viewset%3Decom\" target=\"_blank\">stand alone mixer<\/a> fit with a whisk attachment.
