Reserve pits.&nbsp;<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #c0c0c0;\"><span style=\"color: #ff0000;\">Poaching Liquid.<\/span> Combine water, pits, lavender flower <span class=\"famos-shop click famos-annotation refid-11O5S\" title=\"famos sachet\">sachet<\/span>, thyme, lemon peel, and sugar in a saucepan. Place over medium heat. Cook for about 5 minutes until the sugar has dissolved.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #c0c0c0;\"><span style=\"color: #ff0000;\">Poach Cherries.<\/span> Add cherries to the saucepan. Poach cherries (between <span style=\"color: #ff0000;\">160 and 180 degrees Fahrenheit)<\/span> until cherries are slightly collapsing but still holding their shape. (Note: a simmer is when small bubbles barely break the water surface, poaching is when there are bubbles on the sides or bottom of the pan).&nbsp;<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #c0c0c0;\"><span style=\"color: #ff0000;\">Strain.<\/span> Use a <span class=\"famos-shop click famos-annotation refid-11O5U\" title=\"famos slotted spoon\">slotted spoon<\/span> to remove the cherries from the saucepan. Set aside. Discard pits, thyme, lavender sachet, and lemon peel.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #c0c0c0;\"><span style=\"color: #ff0000;\">Reduce Liquid.<\/span> Increase the heat and reduce poaching liquid until it reaches a syrup consistency.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #c0c0c0;\"><span style=\"color: #ff0000;\">Add Cherries<\/span>.
