In America, lobster is generally enjoyed two ways: steamed and served with a bath of melted butter; or, if you are on the East Coast, in a \u201clobster roll\u201d(lobster meat combined with melted butter and mayonnaise served in a roll). However, we cannot forget that it is also the season for apples and Asian pears (and in California, heirloom tomatoes and avocados are delicious right now).&nbsp;<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #999999;\"><a href=\"http:\/\/www.chefmorgan.com\/rolling-with-lobster-california-style-and-a-little-french-influence\/seasonal-fruit\" rel=\"attachment wp-att-9727\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-9727\" title=\"seasonal fruit\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/09\/seasonal-fruit-333x500.jpg\" alt=\"seasonal fruit\" width=\"333\" height=\"500\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/09\/seasonal-fruit-333x500.jpg 333w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/09\/seasonal-fruit-200x300.jpg 200w\" sizes=\"auto, (max-width: 333px) 100vw, 333px\" \/><\/a>&nbsp;<\/span><\/p>\n<p><span style=\"color: #999999;\">It is in the nineties in southern California (and will be for some time).&nbsp; In this heat, hot, heavy food does not sound appealing. Sliced, Asian pears, apples, tomatoes and cucumbers all look like wheels and it seems to me that with these seasonal fruit wheels we can create our own &#8220;roll&#8221; that uses the West Coast bounty and is compatible with this summer weather. The weather, however, is not on board with the calendar of seasons. The beaches are crowded, the bike paths are full, leaves are still on the trees, and everyone is just trying to capture an ocean breeze to keep cool.&nbsp;<\/span><\/p>\n<p style=\"text-align: center;\">&nbsp;<a href=\"http:\/\/www.chefmorgan.com\/rolling-with-lobster-california-style-and-a-little-french-influence\/round-ingredients-2\" rel=\"attachment wp-att-9728\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-9728\" title=\"apple avocado and lobster \" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/09\/round-ingredients1-580x386.jpg\" alt=\"apple avocado and lobster \" width=\"580\" height=\"386\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/09\/round-ingredients1-580x386.jpg 580w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/09\/round-ingredients1-350x233.jpg 350w\" sizes=\"auto, (max-width: 580px) 100vw, 580px\" \/><\/a><\/p>\n<p><span style=\"color: #999999;\">September marks the time for lobster (and it is actually less expensive this year than usual). It is too hot for hot lobster and the heaviness of mayonnaise, butter, and enriched bread. This week we are taking the less traditional route and enjoying this crustacean in a way that is full of color, lightness and cooling ingredients (with a little French influence).<\/span><\/p>\n<p><span style=\"color: #999999;\">Our California \u201croll\u201d is a salad with layers of sliced Asian pears, cucumbers, tomatoes, and avocados with intermittent layers of lobster meat dressed in a creamy avocado and cilantro dressing.&nbsp; It is a lobster and fruit <\/span><em style=\"color: #999999;\">mille-feuille <\/em><span style=\"color: #999999;\">(a mode of preparation generally used for French layered desserts).<\/span><\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/www.chefmorgan.com\/rolling-with-lobster-california-style-and-a-little-french-influence\/bright-side-view\" rel=\"attachment wp-att-9730\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-9730\" title=\"lobster &quot;roll&quot; California style\" src=\"http:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/09\/bright-side-view-385x500.jpg\" alt=\"lobster &quot;roll&quot; California style\" width=\"385\" height=\"500\" srcset=\"https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/09\/bright-side-view-385x500.jpg 385w, https:\/\/www.chefmorgan.com\/engine\/wp-content\/uploads\/2012\/09\/bright-side-view-231x300.jpg 231w\" sizes=\"auto, (max-width: 385px) 100vw, 385px\" \/><\/a><\/p>\n<p><span style=\"color: #999999;\">Our roll (or salad) can be made ahead and assembled right before service. If you do not want a layered <\/span><em style=\"color: #999999;\">mille-feuille <\/em><span style=\"color: #999999;\">appearance, you can combine all the ingredients together for more of a lobster chopped salad (it also makes great leftovers this way).
